Rice and Peas (Jamaican Coconut Rice with Kidney Beans)

Rice and peas is one of Jamaica’s best-known rice dishes, traditionally served as a fragrant side rather than a plain accompaniment. Despite the name, the “peas” are kidney beans, cooked here with long-grain rice in coconut milk until the grains are tender, lightly creamy and separate. Thyme, garlic, spring onion and allspice give the pot its recognisable Caribbean aroma, with the beans adding colour and substance. It is especially good alongside jerk-style dishes, stews, curries or grilled vegetables, and works well whenever a simple meal needs a more savoury, aromatic base.

Why this recipe works

  • Aromatic cooking liquid: Coconut milk, thyme, garlic, spring onion and allspice infuse the rice as it cooks, so the flavour is built into the grains rather than added at the end.
  • Tender, lightly creamy grains: Rinsing the rice first helps prevent heaviness, while coconut milk gives the finished dish a gentle richness.
  • Simple side-dish method: Cooked kidney beans go straight into the saucepan with the rice, making the dish practical without losing its familiar hearty texture.

Authenticity notes

  • Jamaican rice and peas: In Jamaican cooking, “peas” often refers to beans such as red kidney beans. Coconut milk, thyme and allspice are key to the dish’s recognisable flavour.
  • How it is usually served: Rice and peas is a classic side for jerk-style dishes, curries, stews and other richly seasoned Caribbean mains.

Ingredient notes

  • Choose long-grain rice: Long-grain white rice gives the most even, separate texture. Basmati also works if you prefer a slightly more fragrant finish.
  • Whole allspice gives gentle warmth: Allspice berries perfume the pot without leaving a gritty texture. Remove them before serving if you do not want anyone biting into one.

Timing notes

  • Let the rice rest covered: The covered rest after cooking allows steam to finish softening the grains and helps the texture settle before fluffing.
  • Serve warm after fluffing: Rice and peas is best served once the grains have been gently loosened and the aromatics have been removed if desired.

Make-ahead tips

  • Good for meal prep: Cool the rice quickly, then refrigerate in a sealed container and use within the recommended storage time.
  • Freezes well: Freeze in portions once cooled, then defrost overnight in the fridge before reheating.
  • Reheat gently: Warm in a covered saucepan with a splash of water, stirring occasionally, until piping hot.

  1. Rinse the rice in a colander under cold water until the water runs mostly clear, then drain well. Thinly slice the spring onions. Lightly crush the garlic cloves with the flat of a knife.
  2. Put the water, coconut milk, allspice berries, thyme sprigs, garlic, fine sea salt and black pepper into a saucepan and bring to a gentle simmer over medium heat. Simmer for 3 minutes to let the aromatics infuse.
  3. Stir in the rice, red kidney beans and most of the spring onion, reserving a little for serving. Bring back to a gentle simmer, then reduce the heat to low and cover with a tight-fitting lid.
  4. Cook on the lowest heat for 20 minutes, without lifting the lid, until the rice is tender and the liquid is absorbed. If the rice is still firm, cover and cook for 3 to 5 minutes more.
  5. Remove from the heat and rest, covered, for 10 minutes. Fluff with a wooden spoon, then pick out the thyme sprigs, garlic and allspice berries if you like. Scatter over the reserved spring onion and serve warm.

Substitutions
