Moroccan Roasted Cauliflower with Cumin, Paprika and Lemon
Why this recipe works
- Warm spicing: Cumin, sweet paprika and garlic coat the cauliflower evenly, giving each floret savoury depth without making the dish hot.
- Caramelised edges: Roasting at high heat encourages browning on the outside while keeping the centres tender.
- Bright finish: Lemon juice added after roasting lifts the olive oil and spices, keeping the final dish fresh and balanced.

Ingredient notes
- Use sweet paprika: Sweet paprika adds colour and gentle warmth rather than chilli heat, which keeps the cauliflower mild and aromatic.
- Add lemon at the end: Squeezing the lemon over the roasted cauliflower preserves its brightness and stops the flavour from dulling in the oven.
- Choose the herb to suit: Fresh coriander gives a bright, herbal finish; parsley is a clean alternative if coriander is not to your taste.
Common mistakes
- Overcrowding the tray: If the florets overlap, they steam before they brown. Spread them in a single layer and use a second tray if needed.
- Browning too quickly: Garlic and spices can darken at the edges. If the cauliflower is colouring before it is tender, reduce the oven to 200°C (390°F) for the final stretch.
- Uneven florets: Cut the cauliflower into similar-sized pieces so the smaller florets do not burn before the larger ones become tender.
Serving ideas
- Serve with grains or flatbreads: Pair with couscous, rice, warm flatbreads or chickpea dishes for an easy vegetable-led meal.
- Add a creamy sauce: A drizzle of tahini sauce works well with the cumin, paprika and lemon, especially if serving the cauliflower as part of a larger spread.
- Finish freshly: Extra coriander and lemon wedges at the table make the dish feel brighter just before serving.
Make-ahead tips
- Prepare the cauliflower ahead: Cut the florets in advance and keep them chilled until ready to toss with the spiced oil and roast.
- Reheat in the oven: Warm leftovers on a baking tray at 200°C (390°F) until piping hot to bring back some of the roasted texture.
- Best freshly roasted: The flavour keeps well, but the caramelised edges are at their best soon after roasting.

Ingredients
Instructions
- Heat the oven to 220°C (430°F). Cut the cauliflower into bite-sized florets, keeping them as even as you can so they roast at the same rate.
- In a large bowl, mix the olive oil with the garlic, ground cumin, sweet paprika and fine sea salt. Add the cauliflower and toss until every piece is well coated.
- Spread the cauliflower out on a baking tray in a single layer. Roast for 25 to 30 minutes, turning once halfway, until deeply golden at the edges and tender when pierced with a knife.
- Finely chop the fresh coriander. Squeeze over the lemon juice, toss, then scatter with the coriander and serve warm.
Recipe notes
Tips
- For the best caramelisation, make sure the cauliflower is in a single layer with a little space between pieces; use a second tray if needed.
- If the cauliflower is browning too quickly before it is tender, turn the oven down to 200°C (390°F) for the final 10 minutes.
Substitutions
- Replace Extra virgin olive oil with Olive oil for a slightly milder flavour.
- Replace Fresh coriander with Fresh parsley for a different, but still fresh, finish.
Storage
- Refrigerate up to 3 days
- Cool completely, then refrigerate in a sealed container. Reheat on a baking tray at 200°C (390°F) for 8 to 10 minutes until piping hot, or warm in a frying pan with a small splash of water to prevent drying.
