Sopa Azteca (Tortilla Soup with Chipotle and Avocado)
Why this recipe works
- Smoky, rounded broth: Tomatoes, onion, garlic, cumin and chipotle build a savoury base with warmth and depth before the soup is blended.
- Crunch where it matters: Adding the tortilla strips at the end keeps them crisp enough to contrast with the smooth broth.
- Fresh finish: Lime and avocado lift the smoky soup, while queso fresco adds a mild, creamy counterpoint.

Adjust the heat
- For a gentler soup: Use less chipotle sauce and let the tomato, onion and cumin carry the flavour.
- For more heat: Add extra chipotle sauce gradually after blending, tasting as you go so the smokiness does not overpower the broth.
Texture tips
- Keep the tortilla strips crisp: Store the fried strips separately and add them directly to each bowl just before serving.
- Choose your broth texture: Blend the soup fully for a smooth finish, or leave it slightly chunky for a more rustic bowl.
Make-ahead tips
- Keep toppings separate: Refrigerate or freeze only the soup base; add fresh avocado, lime, queso fresco and tortilla strips when serving.
- Reheat gently: Warm the soup on the hob until piping hot, then finish each bowl with the fresh toppings.
Ingredient notes
- Use firm-ripe avocado: Choose avocado that is ripe but still holds its shape, so the chunks stay distinct in the hot soup.
- Queso fresco substitute: Feta gives a similar crumbly, salty finish, but it is usually sharper and more assertive than queso fresco.

Instructions
- Cut the corn tortillas into thin strips. Dice the onion, crush the garlic, and roughly chop the tomatoes.
- Heat 1 tbsp of the vegetable oil in a frying pan over medium-high heat. Fry the tortilla strips for 3 to 5 minutes, turning often, until crisp and deep golden, then transfer to a plate.
- Heat the remaining 1 tbsp vegetable oil in a large pot over medium heat. Add the onion with a pinch of salt and cook for 6 to 8 minutes until softened, then stir in the garlic and ground cumin for 30 seconds until fragrant.
- Add the tomatoes and cook for 5 to 7 minutes, stirring, until they break down and look jammy. Stir in the chipotle sauce, then pour in the vegetable stock and bring to a gentle simmer.
- Simmer for 10 minutes to meld the flavours, then blend until smooth (or leave slightly chunky if you prefer). Taste and adjust with more chipotle sauce if you want extra heat.
- Halve and stone the avocados, then cut the flesh into chunks. Cut the limes into wedges and crumble the queso fresco.
- Ladle the hot soup into bowls and stir through a small handful of tortilla strips in each bowl just before serving. Top with avocado and queso fresco, and squeeze over lime to finish.
Recipe notes
Tips
- For the best crunch, keep the tortilla strips separate and add them to each bowl at the table so they stay crisp.
- If you are serving anyone who is pregnant, elderly, or immunocompromised, make sure the soup is piping hot throughout and use pasteurised queso fresco.
Substitutions
- Replace queso fresco with feta cheese for a similar salty, crumbly finish.
- Replace chipotle sauce with harissa for a different smoky heat.
Storage
- Refrigerate up to 3 days
- Cool the soup quickly and refrigerate in a sealed container for up to 3 days. Freeze the soup (without tortilla strips, avocado, lime, or queso fresco) for up to 3 months; defrost overnight in the fridge and reheat gently on the hob until piping hot, then add fresh toppings.
