Tlayudas Oaxaqueñas (Large Crisped Tortillas with Beans, Cabbage and Queso Oaxaca)

Tlayudas Oaxaqueñas are Oaxaca’s generously sized crisped corn tortillas, served open-faced with savoury toppings and eaten while the base is still hot and brittle. In this vegetarian version, refried black beans give the tortilla an earthy foundation, queso Oaxaca melts into soft strands, and lime-dressed cabbage adds freshness and crunch. Avocado and a simple tomato salsa keep the flavours bright, making the dish feel substantial without losing its street-food immediacy. Best sliced into wedges and served straight from the pan, it is ideal for a relaxed dinner or sharing at the table.

Why this recipe works

  • Crisp base, fresh toppings: Toasting the tortilla before adding the beans and cheese helps it stay crunchy beneath the cabbage, avocado and salsa.
  • Brightness cuts through richness: Lime in both the salsa and cabbage balances the creamy avocado, refried beans and melted queso Oaxaca.
  • Simple ingredients, layered flavour: Earthy beans, mild cheese, oregano-scented tomato salsa and salted cabbage create depth without a long cooking process.

Texture tips

  • For the crispest tortilla: Keep the pan hot enough to toast the base steadily and press the tortilla gently so it makes even contact with the surface.
  • Add fresh toppings last: Cabbage, avocado and salsa should go on just before serving so the tortilla keeps its snap.

Ingredient notes

  • Use large corn tortillas: A larger, sturdy corn tortilla gives the tlayuda its recognisable format and holds up better once topped.
  • Queso Oaxaca matters: Queso Oaxaca melts into soft strands with a mild, milky flavour; mozzarella is the closest practical substitute.
  • Balance the lime: Taste the cabbage and salsa before serving and adjust with a little extra lime or salt if they need more brightness.

Authenticity notes

  • Oaxacan style: Tlayudas are closely associated with Oaxaca and are typically built on a large toasted corn tortilla with beans, cheese and fresh toppings.
  • Toppings can vary: Many versions include additional meats or sauces, but beans, cabbage, avocado, salsa and queso Oaxaca make a satisfying vegetarian version.

Make-ahead tips

  • Keep the components separate: Store the salsa, cabbage mixture, beans and cheese separately so the tortillas can be crisped fresh.
  • Re-crisp before serving: Warm the bean-and-cheese tortillas in a hot dry frying pan until crisp and piping hot, then add the cold toppings.
  • Best served straight away: Tlayudas have the best contrast of crunchy base and fresh toppings when assembled immediately before eating.

  1. Make the salsa: finely chop the tomatoes and half the onion, then crush or finely grate the garlic. Squeeze in the juice of 1 lime, add the dried oregano and 0.5 tsp of the fine sea salt, and set aside to macerate while you prep the rest.
  2. Thinly slice the green cabbage and put it in a mixing bowl. Squeeze over the juice of the remaining lime, add the remaining 1 tsp fine sea salt, and toss well; leave it to soften for 10 minutes.
  3. Slice the remaining onion very thinly and stir it through the cabbage. Halve, stone and slice the avocados, keeping them covered on a plate so they do not dry out.
  4. Heat a grill or large frying pan over medium-high heat. Brush one side of each corn tortilla lightly with vegetable oil, then lay them oiled-side down and cook for 1 to 2 minutes until lightly toasted.
  5. Flip the tortillas and spread the refried beans over each one, leaving a small border. Scatter over the queso Oaxaca, then cook for 3 to 5 minutes until the base is crunchy and the cheese is melted; reduce the heat if the tortilla is browning too quickly.
  6. Top each tlayuda with the cabbage mixture, avocado and a spoonful of salsa. Slice into wedges and serve straight away while the base is crisp.

Tips

Substitutions

  • Replace Queso Oaxaca with Mozzarella for a similar melt and mild flavour.
  • Replace Dried oregano with Fresh oregano for a brighter herbal note.

Storage

  • Refrigerate up to 2 days
  • Store the salsa, cabbage mixture, beans and cheese separately in the fridge. Reheat the bean-and-cheese tortillas in a hot dry frying pan until crisp and piping hot, then add the cold toppings just before serving.
