Tlayuda with Black Beans and Chorizo

A tlayuda is a large Mexican toasted tortilla, often associated with Oaxaca, served open-faced and cut into wedges for eating by hand. Its character comes from the crisp, slightly chewy base and generous savoury toppings. Here, rough-mashed black beans form a creamy layer beneath browned chorizo, lime-dressed cabbage, ripe avocado, salsa roja and crumbled queso fresco. The result is filling but fresh, with smoky spice, acidity, crunch and richness in each bite. It works well as a quick lunch or informal sharing plate, especially when assembled just before serving so the tortilla keeps its texture.

Why this recipe works

  • Strong texture contrast: The crisp-edged tortilla, rough mashed beans, crunchy cabbage and creamy avocado keep each bite varied.
  • Layered savoury flavour: Chorizo brings smoky, spiced richness, while salsa, lime and queso fresco add brightness and saltiness.
  • Fast assembly: Canned beans and a single frying pan keep the cooking time short without losing the key tlayuda-style structure.

Adjust the heat

  • For a milder tlayuda: Choose a mild salsa and use a less spicy chorizo, keeping the lime and cabbage for freshness.
  • For more heat: Use a hotter salsa roja or add pickled chillies just before serving so the heat stays sharp and lively.

Authenticity notes

  • Oaxacan-style format: Tlayudas are closely associated with Oaxaca and are typically built on a large, thin toasted tortilla with beans and bold toppings.
  • Weeknight adaptation: This version keeps the flat, toasted, cut-into-wedges format while using accessible tortillas and canned black beans.

Texture tips

  • Toast for structure: Toast the tortillas until the edges are crisp but the middle remains slightly pliable, so they hold the toppings without becoming brittle.
  • Assemble just before serving: Spread the beans and salsa shortly before eating to keep the tortilla from softening too quickly.

Make-ahead tips

  • Keep components separate: Store the beans, chorizo, cabbage, salsa and cheese separately, then toast fresh tortillas and assemble when ready.
  • Reheat before assembling: Warm the beans and chorizo in a frying pan until piping hot, then add the fresh toppings at the end.

  1. Tip the black beans into a colander, rinse briefly, then shake well to drain. Put half the oil in a large frying pan over medium heat, add the beans and cook for 3 to 4 minutes, stirring, until hot and starting to split. Mash with the back of a spoon into a rough refried-style paste, then scrape into a bowl.
  2. Return the pan to medium-high heat and add the remaining oil. Squeeze the chorizo meat from its casing into the pan and cook for 5 to 7 minutes, breaking it up, until browned and crisp in places. Transfer to a plate, leaving any spiced oil in the pan.
  3. Add the cabbage to the bowl, squeeze over the juice of half the lime, and toss to lightly dress. Cut the remaining lime half into wedges for serving. Set aside while you toast the tortillas.
  4. Toast the tortillas one at a time in the same pan over medium heat for 1 to 2 minutes per side, until lightly blistered and crisp at the edges. If the pan looks dry, rub it with a little of the chorizo oil left behind. Keep the first tortilla warm while you toast the second.
  5. Spread the mashed beans over each toasted tortilla, then spoon over the salsa. Top with the crisped chorizo and the lime-dressed cabbage. Slice the avocado and arrange on top, then crumble over the queso fresco.

Tips

  • For the best texture, toast the tortillas until the edges are crisp and the centre is still slightly pliable, so they cut cleanly into wedges.
  • If you are serving anyone who is pregnant, elderly, or immunocompromised, make sure the chorizo is cooked until piping hot throughout.

Substitutions

  • Replace Queso fresco with Feta cheese for a similarly salty, crumbly finish.
  • Replace Salsa with Salsa verde for a brighter, sharper topping.

Storage

  • Refrigerate up to 2 days
  • Store the beans, chorizo, cabbage, salsa, and queso fresco separately in airtight containers. Reheat the beans and chorizo in a frying pan over medium heat until piping hot, then toast fresh tortillas and assemble; slice the avocado just before serving.
