Tlayuda Oaxaqueña (Oaxacan Crisp Tortilla with Beans and Cheese)
Why this recipe works
- Strong texture contrast: The crisp tortilla, creamy beans, melted cheese, crunchy cabbage and soft avocado give the dish its satisfying layered bite.
- Fast cooking: Using ready-made refried beans and a hot pan keeps the recipe practical for a quick dinner or casual lunch.
- Bright finish: Lime-dressed cabbage and salsa cut through the richness of the beans and cheese, keeping each bite fresh.

Authenticity notes
- Oaxacan identity: Tlayudas are closely associated with Oaxaca and are known for their large corn tortilla base, bean spread and fresh, savoury toppings.
- Oaxaca cheese: Queso Oaxaca gives the most recognisable stretchy texture and mild dairy flavour, though mozzarella is a practical substitute when needed.
- Served hot and crisp: The dish is at its best when assembled just after the tortilla crisps, so the base stays crunchy under the toppings.
Ingredient notes
- Use sturdy tortillas: Large corn tortillas work best because they can crisp in the pan and hold the beans, cheese and toppings without collapsing.
- Shred the cabbage finely: Thinly shredded cabbage softens quickly with lime while still keeping enough crunch for contrast.
- Choose firm-ripe avocado: Avocado should be ripe enough to taste creamy but firm enough to slice cleanly and sit neatly on the hot tortilla.
Texture tips
- For a crisper base: Let the pan heat properly before adding the tortilla, then keep the heat high enough to blister the surface without scorching it.
- Add fresh toppings last: Cabbage, salsa, avocado and lime should go on after the tlayuda leaves the pan, so they do not soften the tortilla too early.
- Oil the edge lightly: A little oil around the tortilla edge helps the rim turn crisp and lightly golden while the cheese melts.
Make-ahead tips
- Store components separately: Keep beans, cabbage, cheese, salsa and avocado separate where possible to preserve texture and make reheating easier.
- Reheat before assembling: Warm the beans gently until spreadable, then crisp the tortillas in a hot pan before adding fresh toppings.
- Best eaten fresh: Assembled tlayudas lose their crunch as they sit, so serve them straight away rather than storing them fully topped.

Ingredients
Instructions
- Finely shred the white cabbage into a mixing bowl. Squeeze over half the lime and toss well; set aside while you prepare the rest. Cut the avocado into slices and pull the queso Oaxaca into thin strands.
- Warm the refried beans in a small saucepan over low heat until loosened and spreadable, stirring often so they do not catch. If they seem very stiff, stir in a splash of water from the tap a tablespoon at a time until smooth. Keep warm on the lowest heat.
- Heat a cast-iron frying pan (or large frying pan) over medium-high heat and brush with a little of the vegetable oil. Lay in one corn tortilla and cook for 1 to 2 minutes until the underside is crisp and lightly blistered. Flip and cook for 30 to 60 seconds to warm through.
- Spread half the warm beans over the tortilla, leaving a small border. Scatter over half the queso Oaxaca, then drizzle a little more vegetable oil around the edge to help it crisp. Cook for 2 to 4 minutes until the base is crisp and the cheese is melted, adjusting the heat so it does not burn.
- Slide the tlayuda onto a board and top with half the cabbage, avocado, and salsa. Squeeze over the remaining lime to taste. Repeat with the second tortilla and serve straight away while hot and crisp.
Recipe notes
Tips
- For the crispest base, preheat the pan well and keep the heat at medium-high once the tortilla goes in.
- If the beans are very thick, loosening them with a little water makes them easier to spread without tearing the tortilla.
- If serving to pregnant people, young children, older adults, or anyone immunocompromised, ensure the cheese is made from pasteurised milk.
Substitutions
- Replace Queso Oaxaca with Mozzarella for a similar melt and mild flavour.
- Replace Salsa with Salsa verde for a brighter, tangier finish.
Storage
- Refrigerate up to 2 days
- Store leftover components separately where possible: cabbage, beans, cheese, salsa, and avocado. Reheat the beans gently in a saucepan, then crisp the tortillas in a hot dry pan before assembling; add avocado and salsa at the end.
