Flautas de Pollo (Crisp Chicken Tortillas with Guacamole)
Why this recipe works
- Crisp, golden tortillas: Pan-frying the rolled corn tortillas gives the flautas their signature brittle crunch without needing deep frying.
- Freshness cuts through the fried shell: Lime in both the chicken and guacamole keeps the dish bright and prevents it feeling heavy.
- Hot and cool contrast: The hot, crisp flautas are served with soft avocado, sharp onion and fresh coriander for a balanced bite.

Authenticity notes
- Antojito-style serving: Flautas are commonly served as a crisp, snack-style Mexican dish with fresh toppings, salsa or crema-style accompaniments.
- Flautas and tacos dorados: Similar rolled, fried tacos may also be called tacos dorados, with names varying by region, tortilla size and filling.
- Use corn tortillas: Corn tortillas give flautas their characteristic flavour and crisp shell; flour tortillas create a softer, different style.
Ingredient notes
- Choose the right avocado: Use avocados that are ripe enough to mash but not so soft that the guacamole turns watery.
- Warm the tortillas properly: Briefly warming the tortillas makes them flexible enough to roll tightly without cracking.
Texture tips
- Fry in batches: Leave space around each flauta so the tortillas crisp evenly rather than steaming in the pan.
- Serve the guacamole alongside: Keep the guacamole separate until serving so the tortillas stay crisp at the table.
Make-ahead tips
- Cook the chicken ahead: The chicken can be simmered, shredded and seasoned in advance, then refrigerated until ready to roll.
- Keep components separate: For the best texture, store the filling, tortillas and guacamole separately, then assemble and fry before serving.
- Reheat to restore crispness: Reheat cooked flautas on a baking tray at 200°C (390°F) until piping hot and crisp.

Instructions
- Put the chicken thighs in a large pot and cover with water. Add 1 tsp of the fine sea salt and bring to the boil, then reduce to a gentle simmer for 15 to 18 minutes until the chicken is cooked through and tender.
- Lift the chicken out and leave until cool enough to handle, then shred it into thin strands. Season with the black pepper and the remaining salt, then squeeze in the juice of 1 lime and toss well.
- Finely chop the red onion and coriander. Halve and stone the avocados, scoop the flesh into a mixing bowl, then add most of the onion and coriander, reserving a little of each for serving.
- Squeeze in the juice of the remaining lime, then mash to your preferred texture. Taste and adjust with a pinch more salt if needed, then set aside.
- Warm the corn tortillas briefly so they are pliable. Divide the shredded chicken between them, roll up tightly into flautas, and press the seam to help it hold.
- Heat the vegetable oil in a large frying pan over medium-high heat. Fry the flautas seam-side down first, turning with tongs, for 6 to 8 minutes until crisp and golden all over; work in batches if needed so the pan is not crowded.
- Serve the flautas hot with the guacamole, topped with the reserved onion and coriander. Put the salsa alongside for dipping, if using.
Recipe notes
Tips
- If the tortillas crack as you roll, warm them a little longer so they soften and become flexible.
- Keep cooked flautas warm on a baking tray in a 120°C (250°F) oven while you fry the remaining batches.
- If serving to pregnant people, young children, older adults, or anyone immunocompromised, make sure the chicken is cooked through and piping hot.
Substitutions
- Replace Chicken thighs with Chicken breast for a leaner filling; simmer until just cooked, then shred.
- Replace Red onion with White onion for a milder guacamole.
Storage
- Refrigerate up to 2 days
- Cool the chicken and flautas quickly, then refrigerate in an airtight container. Reheat flautas on a baking tray at 200°C (390°F) for 8 to 12 minutes until piping hot and crisp; guacamole is best made fresh, but can be kept with the surface pressed down and covered for up to 1 day.
