Huachinango a la Veracruzana (Red Snapper in Tomato Sauce with Olives and Capers)
Why this recipe works
- Layered savoury sauce: Simmering the tomatoes with onion, garlic and bay leaf before baking gives the sauce enough depth to season the fish properly.
- Bright, briny balance: Olives, capers, pickled jalapeños and lime cut through the richness of the fish and keep the dish lively.
- Moist baked fish: Covering the snapper with hot sauce helps it cook gently and stay succulent in the oven.

Adjust the heat
- For a milder sauce: Add the pickled jalapeños gradually and taste before adding more, as their heat and acidity can vary by brand.
- For more heat: Use extra pickled jalapeños or a little of their brine to sharpen the sauce without changing its Veracruz-style character.
Timing notes
- Serve soon after baking: The fish is best while just cooked and moist; leaving it in the hot sauce for too long can make it firmer.
- Sauce first, fish last: Most of the flavour develops before the fish goes into the oven, so keep the baking stage short and focused.
Ingredient notes
- Choosing the fish: Skin-on red snapper suits this dish well because it has a firm texture and mild sweetness that stand up to the tomato, olives and capers.
- Balance the sharpness: Taste the sauce before baking; capers, olives and pickled jalapeños all bring salt and acidity, so adjust seasoning carefully.
Make-ahead tips
- Make the sauce ahead: The tomato sauce can be cooked in advance and refrigerated, then reheated before spooning over the fish and baking.
- Reheat gently: Warm leftovers gently in a 180°C (355°F) oven until piping hot, or heat the sauce separately and add the fish only briefly so it does not dry out.

Ingredients
Instructions
- Heat the oven to 200°C (390°F). Finely chop the onion and garlic, then roughly chop the tomatoes.
- Warm the olive oil in a large frying pan over a medium heat. Cook the onion with a pinch of the salt for 6 to 8 minutes until softened and lightly golden, then stir in the garlic for 1 minute until fragrant.
- Add the tomatoes, bay leaves, remaining salt and the black pepper. Simmer for 10 to 12 minutes, stirring occasionally, until the sauce thickens and the tomatoes break down.
- Stir in the green pitted olives, capers and pickled jalapeños, then cook for 2 minutes. Taste and adjust seasoning if needed.
- Arrange the red snapper in a baking dish in a single layer. Spoon the hot sauce over the fish, making sure it is well covered.
- Bake for 12 to 16 minutes, depending on thickness, until the fish is just cooked and flakes easily. Rest for 2 minutes, then squeeze over lime to taste and scatter with fresh coriander to serve.
Recipe notes
Tips
- For the best texture, pull the fish from the oven as soon as it flakes easily; it will carry on cooking slightly in the hot sauce.
- If serving children or anyone sensitive to heat, add the pickled jalapeños gradually and stop when the sauce tastes balanced.
Substitutions
- Replace green pitted olives with black pitted olives for a slightly softer, fruitier flavour.
- Replace pickled jalapeños with a smaller amount of chili flakes for a cleaner heat.
Storage
- Refrigerate up to 2 days
- Cool, then refrigerate in a sealed container for up to 2 days. Reheat gently in a 180°C (355°F) oven until piping hot, or warm the sauce in a saucepan and add the fish just to heat through so it does not dry out.
