Sheet Pan Teriyaki Salmon with Vegetables and Sushi Rice

Teriyaki salmon is loved for its glossy soy-mirin glaze, where sweetness, ginger, garlic and savoury depth coat rich, tender fish. Here it is turned into a practical sheet-pan dinner, with the salmon roasting alongside tenderstem broccoli and carrot so the vegetables pick up sesame aroma and a little caramelisation. Served over lightly seasoned sushi rice, the dish has the familiar feel of a Japanese-inspired rice bowl: soft rice, flaky fish, crisp-tender vegetables and a final scatter of spring onion and sesame seeds for freshness and crunch.

Why this recipe works

  • Glossy teriyaki depth: Soy sauce, mirin, brown sugar, ginger and garlic simmer into a sweet-savoury glaze that coats the salmon without needing a long marinade.
  • Efficient roasting: The salmon and vegetables cook together on one tray, keeping the method streamlined while giving the vegetables lightly roasted edges.
  • Balanced rice base: Rice vinegar folded through the sushi rice gives a subtle lift that balances the richness of the salmon and the sweetness of the glaze.
  • Weeknight-friendly timing: Most of the cooking is hands-off, with the rice steaming while the glaze, vegetables and salmon are prepared.

Timing notes

  • Let the rice stand: Keeping the rice covered off the heat allows the grains to finish steaming and settle before the vinegar is folded through.
  • Serve the salmon promptly: Salmon is best served soon after roasting, while the centre is still moist and the glaze is glossy.

Texture tips

  • Keep the salmon moist: Take the salmon out when it is just opaque and flakes easily; it will dry out if left in the oven too long.
  • Give the vegetables space: Spread the broccoli and carrot out on the tray so they roast rather than steam.

Ingredient notes

  • Choose firm fresh ginger: Fresh, firm ginger gives the glaze a cleaner heat and aroma than older, fibrous pieces.
  • Use light soy sauce: Light soy sauce keeps the glaze savoury without making it overly dark or heavy.
  • Skin-on or skinless salmon: Either works here; skin-on fillets can help protect the fish from drying, while skinless fillets are easier to eat over rice.

Make-ahead tips

  • Make the glaze in advance: The teriyaki glaze can be simmered ahead and chilled, then warmed slightly or brushed on cold before roasting.
  • Prepare the vegetables early: The broccoli and carrot can be cut in advance and kept refrigerated until ready to roast.
  • Reheat gently: Warm leftover rice with a splash of water until piping hot, and reheat the salmon and vegetables at 180°C (355°F) to help avoid drying them out.

  1. Heat the oven to 220°C (430°F). Rinse the rice in cold water until the water runs mostly clear, then drain well.
  2. Cook the rice with 450 ml water: bring to the boil, cover, then cook on the lowest heat for 12 minutes. Take off the heat and leave, still covered, for 10 minutes.
  3. Meanwhile, peel and finely grate the ginger, and finely grate the garlic. In a small saucepan, combine the soy sauce, mirin, brown sugar, ginger and garlic; simmer for 3 to 5 minutes until glossy and slightly thickened, then take off the heat.
  4. Cut the broccoli into long, bite-sized pieces and peel the carrot, then slice it into thin batons. Toss the vegetables with the sesame oil on a baking tray, spreading them out so they roast rather than steam.
  5. Nestle the salmon among the vegetables and brush the fish generously with the teriyaki glaze. Roast for 10 minutes, then brush with more glaze and roast for 3 to 5 minutes more, until the salmon is just opaque and flakes easily.
  6. Fluff the rice, then fold through the rice vinegar. Slice the spring onion, serve the salmon and vegetables over the rice, and finish with the spring onion and roasted sesame seeds.

Recipe notes

Tips

  • For the best texture, do not overcook the salmon; take it out when it flakes easily and the centre is still moist.
  • If serving anyone who is pregnant, elderly, or immunocompromised, cook the salmon until it is piping hot throughout.

Substitutions

  • Replace Mirin with dry sherry for a similar sweetness and aroma.
  • Replace Rice vinegar with white wine vinegar for a slightly sharper finish.

Storage

  • Refrigerate up to 2 days
  • Cool leftovers quickly, then refrigerate in a sealed container. Reheat the rice with a splash of water in the microwave until piping hot, and warm the salmon and vegetables in a 180°C (355°F) oven for 8 to 10 minutes to avoid drying out.
