Tofu Bulgogi Bowl

A tofu bulgogi bowl takes the familiar sweet-savoury character of Korean bulgogi and turns it into a practical vegetarian rice dish. Instead of marinated meat, firm tofu is browned until crisp-edged, then coated in a glossy soy, garlic, ginger and brown sugar sauce that clings rather than soaks. Short-grain rice gives the bowl its soft, slightly sticky base, while sautéed onion and carrot add sweetness and texture. Finished with spring onion and roasted sesame seeds, it is quick enough for a weeknight dinner but still has the satisfying mix of umami, fragrance and crunch that makes bowl meals so appealing.

Why this recipe works

  • Crisp-edged tofu: Drying the tofu and browning it before adding the sauce gives the pieces a firmer texture and lightly crisp edges.
  • Sweet-savoury glaze: Soy sauce, brown sugar, garlic and ginger reduce into a glossy coating that brings the familiar balance of bulgogi-style flavour.
  • Efficient cooking: The rice steams while the tofu and vegetables cook, keeping the whole bowl practical for a weeknight dinner.

Texture tips

  • For crisper tofu: Pat the tofu dry well before cutting and give it enough time in the pan to brown before turning.
  • Keep the sauce glossy: Let the sauce bubble briefly before returning the tofu so it coats the pieces rather than soaking into them.

Ingredient notes

  • Choose firm tofu: Firm tofu holds its shape in the pan and develops better browning than softer varieties.
  • Short-grain rice matters: Short-grain rice gives the bowl a slightly sticky, tender base that works well with the glossy sauce.

Make-ahead tips

  • Store rice and tofu separately: Keeping the tofu mixture separate from the rice helps preserve texture and makes reheating more even.
  • Reheat gently but thoroughly: Warm the tofu mixture in a frying pan with a small splash of water until piping hot, then serve over reheated rice.

  1. Rinse the rice in cold water until the water runs mostly clear. Tip into a saucepan with the water, bring to the boil, then cover and cook on the lowest heat for 12 minutes. Take off the heat and leave, covered, for 10 minutes to steam.
  2. Meanwhile, cut the tofu into bite-sized pieces. Thinly slice the onion, cut the carrot into fine matchsticks, finely grate the garlic, and grate the ginger. Thinly slice the spring onions and set them aside for serving.
  3. In a mixing bowl, stir together the light soy sauce and brown sugar until the sugar dissolves, then mix in the garlic and ginger. Set the sauce by the hob so it is ready to add quickly. Keep the sesame seeds for finishing.
  4. Heat 1 tbsp sesame oil in a large frying pan over medium-high heat. Add the tofu and cook for 6 to 8 minutes, turning occasionally, until well browned and crisp at the edges. Transfer to a plate.
  5. Add the remaining 1 tbsp sesame oil to the pan, then sauté the onion and carrot for 4 to 5 minutes until softened but still bright. Pour in the soy sauce mixture and let it bubble for 1 to 2 minutes until glossy. Return the tofu to the pan and toss for 1 to 2 minutes until evenly coated and hot through.
  6. Divide the rice between two bowls and spoon the tofu bulgogi and vegetables over the top. Finish with the spring onion and roasted sesame seeds. Serve straight away while the sauce is sticky and the tofu is crisp-edged.

Recipe notes

Tips

  • For the best texture, pat the tofu dry before cutting; less surface moisture helps it brown quickly.
  • Keep the heat fairly high when you add the sauce so it reduces to a glossy coating rather than turning watery.
  • If serving to anyone vulnerable, make sure the tofu is piping hot all the way through before serving.

Substitutions

  • Replace brown sugar with honey for a rounder sweetness and a slightly stickier glaze.
  • Replace sesame oil with olive oil for cooking, then use a small drizzle of sesame oil at the end for aroma.

Storage

  • Refrigerate up to 3 days
  • Cool and refrigerate the tofu and vegetables separately from the rice if possible. Reheat the tofu mixture in a frying pan over medium heat with a splash of water until piping hot; reheat the rice in the microwave or a covered saucepan with a little water.
