Kongnamul Muchim (Korean Seasoned Soybean Sprouts)
Why this recipe works
- Fast blanching: A short cook softens the sprouts just enough while keeping their characteristic crunch.
- Simple seasoning: Garlic, spring onion, soy sauce and sesame oil give the sprouts savoury depth without weighing them down.
- Easy to serve: It works as a light side dish in a Korean spread, with rice, or alongside richer grilled and braised dishes.

Texture tips
- Keep the sprouts crisp: Blanch only until just tender, then rinse briefly under cold water to stop the cooking.
- Remove excess water: Squeeze the sprouts gently after draining so the sesame and soy seasoning clings rather than diluting.
Ingredient notes
- Use soybean sprouts: Soybean sprouts are thicker and nuttier than mung bean sprouts, with yellow bean tips that give this dish its distinctive texture.
- Check freshness: Choose sprouts that look firm and pale with no sour smell or slimy texture.
Make-ahead tips
- Prepare in advance: The dish can be made a few hours ahead and chilled, which gives it a cleaner, firmer texture.
- Refresh before serving: If liquid collects in the container, drain it off and toss the sprouts again before serving.
Authenticity notes
- Home-style banchan: Kongnamul muchim is commonly served as one of several small Korean side dishes, bringing freshness and crunch to the table.

Instructions
- Bring a large pot of water to the boil and add the fine sea salt. Add the soy bean sprouts and blanch for 2 minutes, until just tender but still crisp. Drain immediately in a colander and rinse briefly under cold running water to stop the cooking.
- Squeeze the sprouts very gently to remove excess water, then tip into a mixing bowl. Finely grate the garlic and thinly slice the spring onion, then add both to the bowl. Toss well to distribute the aromatics.
- Add the light soy sauce, sesame oil and roasted sesame seeds. Toss with your hands or a spoon until evenly seasoned, then taste and adjust with a small pinch more fine sea salt if needed. Serve straight away or chill briefly for a cleaner, firmer texture.
Recipe notes
Tips
- Do not overcook the soy bean sprouts: a short blanch keeps them crisp and prevents a watery side dish.
- After draining, squeeze out excess water gently so the seasoning clings rather than diluting in the bowl.
- If serving to pregnant people, young children, older adults, or anyone immunocompromised, ensure the sprouts are cooked thoroughly and served promptly.
Substitutions
- Replace light soy sauce with dark soy sauce for a deeper colour and slightly sweeter, more robust flavour.
- Replace roasted sesame seeds with white sesame seeds, lightly toasted in a dry frying pan until fragrant.
Storage
- Refrigerate up to 2 days
- Cool quickly, cover and refrigerate. Eat within 2 days; the sprouts will release water over time, so drain off any excess liquid and toss again before serving.
