Philly Cheesesteak Stuffed Peppers
Why this recipe works
- Classic cheesesteak flavour: Thin ribeye, softened onions, Worcestershire sauce and provolone create the savoury, beefy profile associated with a Philly cheesesteak.
- Fast filling: The beef cooks quickly once sliced thinly, so most of the time is spent letting the peppers soften in the oven.
- Hearty but lighter: Green pepper halves replace the roll while still giving structure, sweetness and a satisfying baked finish.

Ingredient notes
- Choose tender beef: Ribeye suits this recipe because it cooks quickly and stays tender when sliced very thinly.
- Slice against the grain: Cutting the beef against the grain helps keep the filling tender rather than chewy.
- Use a good melting cheese: Provolone gives a mild, savoury melt; mozzarella works if you prefer a stretchier, softer topping.
Common mistakes
- Do not overcook the beef: Brown the ribeye just until it loses its raw colour, as it will continue heating once baked inside the peppers.
- Keep the peppers sturdy: Bake until tender but not collapsed, so the halves still hold the filling neatly.
- Watch the cheese: If the cheese browns before the peppers are tender, loosely cover the dish near the end of baking.
Make-ahead tips
- Cook the filling ahead: The beef and onion mixture can be cooked in advance, cooled and refrigerated before assembling.
- Assemble before baking: For the best texture, fill the peppers and add the cheese shortly before they go into the oven.
- Reheat gently: Reheat leftovers in a 180°C (355°F) oven until the filling is piping hot and the cheese has remelted.

Ingredients
Instructions
- Heat the oven to 200°C (390°F). Halve the green peppers lengthways, remove the seeds and white pith, then set the halves cut-side up in a baking dish.
- Thinly slice the onion. Heat the olive oil in a large frying pan over medium heat, add the onion with half the salt and half the pepper, and cook for 8 to 10 minutes until softened and lightly golden.
- Slice the ribeye very thinly against the grain. Add the beef to the pan, increase the heat to medium-high, and cook for 2 to 3 minutes, stirring, until just browned.
- Crush in the garlic and cook for 30 seconds until fragrant. Stir in the Worcestershire sauce and the remaining salt and pepper, then take off the heat.
- Spoon the beef and onion mixture evenly into the pepper halves, packing it in lightly. Tear or slice the provolone and lay it over the tops.
- Bake for 18 to 22 minutes until the peppers are tender and the cheese is melted and bubbling. Rest for 2 minutes, then serve hot straight from the dish.
Recipe notes
Tips
- For easier slicing, chill the ribeye for 15 minutes, then cut it as thinly as you can against the grain.
- If the cheese is melting before the peppers are tender, loosely cover the dish for the last 5 minutes to prevent over-browning.
- For anyone who is pregnant, elderly, or immunocompromised, make sure the beef is cooked through and the filling is piping hot before serving.
Substitutions
- Replace Provolone cheese with Mozzarella for a milder, stretchier topping.
- Replace Worcestershire sauce with Soy sauce for a similar savoury depth.
Storage
- Refrigerate up to 3 days
- Cool completely, then refrigerate in a sealed container. Reheat in a 180°C (355°F) oven for 12 to 15 minutes until piping hot; if frozen, thaw overnight in the fridge before reheating for best texture.
