Coconut Cream Pie

With its crisp pastry shell, chilled coconut custard and soft whipped cream topping, coconut cream pie is a classic American dessert centred on smooth texture and gentle tropical flavour. The filling is thickened on the hob with milk, coconut milk, egg yolks and cornflour, then left to set until sliceable but still softly wobbly. Toasted desiccated coconut adds fragrance and a little chew, cutting through the richness of the cream. Served cold, it makes a practical make-ahead pudding for gatherings, celebrations or any meal that calls for a creamy, neatly sliced dessert.

Why this recipe works

  • Silky custard filling: Coconut milk, whole milk and egg yolks create a smooth filling that sets firmly enough to slice once chilled.
  • Crisp pastry contrast: Baking the pastry case fully before filling keeps the base dry and crisp against the chilled custard.
  • Toasted coconut depth: Toasting the desiccated coconut brings out a warmer, nuttier flavour than using it raw.
  • Built for chilling: The pie needs time to set, making it a practical dessert to prepare ahead of serving.

Timing notes

  • Cool the pastry completely: Let the baked case cool fully before adding the custard so steam does not soften the base.
  • Chill until sliceable: The custard should wobble slightly but hold its shape when cut; rushing this stage will give softer slices.
  • Top close to serving: Add the whipped cream and toasted coconut shortly before serving for the freshest texture.

Texture tips

  • Temper the yolks gradually: Whisk hot milk into the yolks before returning them to the pan to help the custard thicken smoothly.
  • Keep the case dry: Bake the pastry until lightly golden and dry to the touch before filling.
  • Whisk constantly: Steady whisking over moderate heat helps prevent lumps and keeps the custard even.

Make-ahead tips

  • Make the pie in advance: Fill the pastry case and chill it ahead of time, then finish with whipped cream and coconut before serving.
  • Hold toppings separately: Keeping the cream and toasted coconut separate until the end helps preserve the crisp topping and lighter finish.
  • Best texture on the day it is topped: Once topped, the pie will still keep, but the pastry and coconut will gradually soften in the fridge.

Ingredient notes

  • Use full-flavoured dairy: Whole milk and double cream give the custard and topping the richness expected in a cream pie.
  • Choose coconut milk carefully: A well-shaken coconut milk helps the filling taste rounded and prevents overly thin or uneven custard.
  • Watch the coconut as it toasts: Desiccated coconut colours quickly, so stir often and remove it from the pan as soon as it turns golden.

  1. Heat the oven to 190°C (375°F). Put the flour, sugar and salt in a bowl, then rub in the butter until it looks like fine crumbs. Add the milk and bring together into a dough, then press into a disc.
  2. Roll the dough out and line a pie dish, pressing it neatly into the corners. Prick the base all over with a fork and chill until firm. This helps prevent shrinkage and keeps the case crisp.
  3. Bake the pastry case for 18 to 22 minutes until lightly golden and dry to the touch. If the base puffs, press it down gently with the back of a spoon partway through baking. Cool completely on a rack.
  4. Toast the desiccated coconut in a dry frying pan over a medium heat for 3 to 5 minutes, stirring often, until golden and fragrant. Tip onto a plate to cool, then set aside most for topping. Keep a small handful back to stir into the custard if you like a little texture.
  5. In a saucepan, whisk together the coconut milk, whole milk, most of the sugar, the cornflour and a pinch of salt until smooth. Warm over a medium heat, whisking, until steaming hot but not boiling. In a bowl, whisk the egg yolks with the remaining sugar.
  6. Pour a ladle of the hot milk mixture onto the yolks, whisking constantly, then whisk the yolk mixture back into the saucepan. Cook over a medium-low heat for 3 to 5 minutes, whisking, until thick and bubbling gently. Take off the heat and whisk in the butter and vanilla extract.
  7. Whisk in a small handful of the toasted desiccated coconut, if using, then pour the custard into the cooled pastry case. Smooth the top and chill until fully set. It should wobble slightly but hold its shape when sliced.
  8. Whip the double cream until it holds soft peaks. Spoon or pipe it over the chilled pie. Finish with the remaining toasted desiccated coconut, then slice and serve.

Recipe notes

Tips

  • For the neatest slices, chill the pie for at least 2 hours, then dip a sharp knife in hot water and wipe dry between cuts.
  • When thickening the custard, keep the heat moderate and whisk constantly so it does not catch on the base of the pan.
  • Food safety: this recipe uses egg yolks; if serving to pregnant people, young children, older adults, or anyone immunocompromised, use pasteurised egg yolks.

Substitutions

  • Replace Vanilla extract with vanilla bean paste for a more pronounced vanilla flavour.
  • Replace Desiccated coconut with toasted sliced almonds for a different nutty topping.

Storage

  • Refrigerate up to 3 days
  • Keep the pie covered in the fridge for up to 3 days. For the best texture, add the whipped cream and toasted coconut close to serving; if already topped, the pastry will soften slightly over time.
