Chicken and Mushroom Pot Pie

A chicken and mushroom pot pie is a hearty savoury pie where a creamy, well-seasoned filling is baked beneath a puff pastry lid rather than fully enclosed in pastry. Here, tender chicken thighs and cremini mushrooms give the filling depth, while leek, garlic, thyme and Dijon mustard keep the sauce aromatic and gently savoury. Double cream adds richness without overwhelming the mushrooms, and the all-butter pastry bakes into a crisp, flaky top with bubbling sauce at the edges. It is the kind of comforting dinner that feels substantial on its own, but also works well with simply cooked greens or a sharp salad alongside.

Why this recipe works

  • Layered savoury flavour: Leek, garlic, mushrooms, thyme and Dijon build depth without making the filling feel heavy.
  • Creamy, stable sauce: Flour, stock and cream create a sauce thick enough to coat the chicken and mushrooms while still bubbling generously under the pastry.
  • Classic comfort contrast: Tender chicken and a rich filling sit beneath crisp, flaky puff pastry for the familiar contrast that makes pot pie so satisfying.

Ingredient notes

  • Choose all-butter pastry if possible: All-butter puff pastry gives better flavour and a more delicate flake than standard pastry, especially in a simple pastry-topped pie.
  • Cremini mushrooms add depth: Cremini mushrooms bring a fuller, earthier flavour than button mushrooms, which keeps the creamy sauce from tasting flat.
  • Dijon balances the cream: A little Dijon mustard sharpens the sauce and cuts through the richness without making the pie taste overtly mustardy.

Common mistakes

  • Adding stock too quickly: Pour the stock in gradually and stir as you go; this helps the flour blend smoothly into the sauce instead of forming lumps.
  • Baking with a thin filling: The sauce should coat the back of a spoon before it goes into the dish. If it looks loose, simmer it a little longer before adding the cream.
  • Boiling after adding cream: Once the double cream is added, keep the heat low. Boiling can make the sauce split or lose its smooth texture.

Make-ahead tips

  • Make the filling ahead: The chicken and mushroom filling can be cooked, cooled and refrigerated in advance. Add the pastry only when you are ready to bake.
  • Reheat in the oven: Reheat leftovers at 180°C (355°F) until piping hot, covering loosely with foil if the pastry starts to brown too much.
  • Freeze in portions: Cool completely, freeze in portions, then defrost overnight in the fridge before reheating thoroughly.

  1. Heat the oven to 200°C (390°F). Put a baking dish in the oven to warm while you make the filling.
  2. Trim and wash the leek well, then slice it. Peel and finely grate the garlic, and slice the mushrooms.
  3. Melt the butter in a large frying pan over a medium heat. Add the leek with a pinch of the salt and cook for 6 to 8 minutes until softened but not coloured.
  4. Stir in the garlic and cook for 30 seconds, then add the mushrooms. Cook for 8 to 10 minutes, stirring occasionally, until the mushrooms have released their liquid and it has mostly evaporated.
  5. Add the chicken thighs and the thyme sprigs, season with the remaining salt and the pepper, and cook for 6 to 8 minutes until the chicken is opaque on the outside. Sprinkle over the plain flour and cook for 1 minute, stirring well so it coats everything.
  6. Pour in the chicken stock a little at a time, stirring to keep the sauce smooth. Bring to a gentle simmer and cook for 10 to 12 minutes until the chicken is cooked through and the sauce is thick enough to coat the back of a spoon.
  7. Turn the heat to low and stir in the Dijon mustard and double cream. Warm for 2 minutes without boiling, then remove and discard the thyme sprigs.
  8. Tip the filling into the warm baking dish and let it cool for 5 minutes so the pastry does not melt on contact. Meanwhile, unroll the puff pastry and cut it to fit the top of the dish.
  9. Beat the egg, then brush it over the pastry. Lay the pastry over the filling, press the edges to seal, and cut a small steam hole in the centre.
  10. Bake for 25 to 30 minutes until the pastry is well risen and deeply golden, and the sauce is bubbling at the edges. Rest for 5 minutes, then serve piping hot.

Recipe notes

Tips

  • For the best lift, keep the puff pastry cold and work quickly when topping the pie.
  • If the sauce looks a little thin before baking, simmer it for a few extra minutes until it coats the spoon; it will thicken further in the oven.
  • Food safety: make sure the chicken is cooked through and piping hot before serving, especially for young children, pregnant people, and older adults.

Substitutions

  • Replace Dijon mustard with whole-grain mustard for a milder heat and a coarser texture.
  • Replace double cream with crème fraîche for a slightly tangier sauce; keep the heat low and do not let it boil.
  • Replace cremini mushrooms with button mushrooms for a lighter mushroom flavour.

Storage

  • Refrigerate up to 3 days
  • Cool completely, then cover and refrigerate. Reheat in a 180°C (355°F) oven for 20 to 25 minutes until piping hot; if the pastry is browning too quickly, cover loosely with foil. Freeze in portions for up to 2 months and defrost overnight in the fridge before reheating.
