Cordero Asado al Horno (Castilian Slow Roasted Lamb)
Why this recipe works
- Gentle roasting: A long, low roast helps the lamb become very tender before the final blast of heat develops a deeply browned exterior.
- Simple savoury depth: Garlic, rosemary, bay, wine and stock season the lamb while creating a pan jus that is rich without needing a separate sauce.
- Built for sharing: Bone-in lamb roasted until yielding is well suited to family-style serving, with the juices spooned over the meat at the table.

Timing notes
- Mostly hands-off: The active work is brief; the important part is allowing enough oven time for the lamb to soften fully.
- Rest before serving: A short rest helps the juices settle and makes the lamb easier to carve or pull.
- Best served hot: Serve soon after resting, while the pan juices are still warm and pourable.
Authenticity notes
- Castilian style: Castilian roast lamb is typically defined by restrained seasoning, slow roasting and a focus on the flavour of the meat itself.
- Classic accompaniments: Simple potatoes, salad, greens or crusty bread work well because they support the lamb without competing with the jus.
Common mistakes
- Letting the tin dry out: Keep some liquid in the roasting tin so the garlic, herbs and juices do not scorch during the long roast.
- Stopping too early: For pull-apart texture, the lamb should yield easily when pressed and feel loose around the bone.
- Browning too soon: Save the higher oven temperature for the end; starting too hot can brown the outside before the meat has become tender.
Make-ahead tips
- Freeze with the jus: Portion cooled lamb with some pan juices so it reheats moist rather than dry.
- Reheat gently: Warm leftovers with a splash of stock in a 180°C (355°F) oven until piping hot throughout.
- Good for leftovers: The cooked lamb can be sliced or shredded for sandwiches, rice bowls or simple plates with vegetables the next day.

Instructions
- Heat the oven to 160°C (320°F). Peel the garlic cloves and lightly crush them with the side of a knife; strip the rosemary leaves from the sprigs.
- Pat the lamb dry, then rub all over with the olive oil, fine sea salt and black pepper. Press the crushed garlic and rosemary onto the surface, then tuck in the bay leaves around the lamb in the roasting tin.
- Pour the dry white wine and chicken stock into the roasting tin around the lamb. Roast for 2 hours 30 minutes, basting every 30 minutes and topping up with pan juices so the tin stays moist.
- Increase the oven to 200°C (390°F) and roast for 10 to 15 minutes until the lamb is deeply browned and very tender. If using a thermometer, aim for about 90°C (195°F) in the thickest part for pull-apart texture.
- Lift the lamb onto a board and rest for 10 minutes. Spoon off excess fat from the roasting tin if you like, then carve or pull the lamb and serve with the pan juices over the top.
Recipe notes
Tips
- Keep the roasting tin liquid level topped up with the pan juices as you baste; if it looks dry at any point, add a splash more chicken stock to prevent the garlic and herbs from scorching.
- For the most tender result, roast until the meat yields easily when pressed with tongs and the bone feels loose in the joint.
- If serving vulnerable groups, cook the lamb until piping hot throughout and avoid serving it pink.
Substitutions
- Replace Fresh rosemary with Fresh thyme for a softer, more floral herb note.
- Replace Dry White Wine with Dry sherry for a deeper, nuttier flavour in the pan juices.
- Replace Chicken stock with Vegetable stock for a lighter jus.
Storage
- Refrigerate up to 3 days
- Cool the lamb and pan juices, then refrigerate in a sealed container. Reheat with a splash of chicken stock in a 180°C (355°F) oven until piping hot; freeze portions with some jus for up to 2 months and defrost overnight in the fridge before reheating.
