Farro Bowl con Verdure (Farro with Roasted Vegetables and Lemon)
Why this recipe works
- Chewy grains, tender vegetables: Farro keeps a satisfying bite, while the roasted vegetables soften and brown at the edges for contrast.
- Bright but rounded dressing: Lemon and garlic cut through the richness of the olive oil, keeping the bowl fresh rather than heavy.
- Good for lunches: The grains and vegetables hold well in the fridge, making this a practical make-ahead lunch or side.

Timing notes
- Use the oven time efficiently: Cook the farro while the vegetables roast so both elements are ready at roughly the same time.
- Best dressed warm: Fold the dressing through the farro while it is still warm so the grains absorb the lemon and olive oil.
Texture tips
- Drain thoroughly: Let the farro drain well before mixing; excess water will dull the dressing and soften the final texture.
- Give the vegetables space: Spread the vegetables in a single layer so they roast and brown instead of steaming on the tray.
Ingredient notes
- Choose firm vegetables: Firm courgette, glossy aubergine and a fresh red pepper will roast more evenly and hold their shape.
- Use good olive oil: Extra virgin olive oil is part of the dressing’s flavour here, so a fresh, rounded oil makes a noticeable difference.
Make-ahead tips
- Make ahead for lunches: Cool completely, then refrigerate in a sealed container for up to 3 days.
- Reheat gently: Warm in a saucepan over a low heat with a small splash of water until piping hot, or serve cold as a grain salad.

Instructions
- Heat the oven to 220°C (430°F). Bring a saucepan of well-salted water to the boil.
- Rinse the farro, then add it to the boiling water. Cook for 20–25 minutes until tender but still pleasantly chewy, then drain well in a colander.
- Meanwhile, cut the courgette, aubergine and red pepper into bite-size pieces. Tip onto a baking tray, drizzle with 2 tbsp of the olive oil, and season with 0.75 tsp of the fine sea salt and 0.25 tsp of the black pepper.
- Roast for 18–22 minutes, turning once, until the vegetables are tender and browned at the edges. If the tray looks dry at any point, add a small splash more olive oil from the remaining amount.
- Finely grate or crush the garlic into a mixing bowl, then add the remaining olive oil, the juice of the lemon, the remaining fine sea salt and the remaining black pepper. Whisk well, then taste and adjust with a little more lemon juice if you like it sharper.
- Add the warm farro and roasted vegetables to the bowl and fold until everything is glossy and well coated. Tear in most of the fresh basil, fold once more, then divide between bowls and finish with the remaining basil.

Tips
- For the best texture, drain the farro thoroughly and fold it through while still warm so it absorbs the lemon and olive oil dressing.
- Cut the vegetables to a similar size so they roast evenly and brown at the same time.
- Food safety: if serving to vulnerable groups, ensure the farro is cooked until fully tender and serve the bowl piping hot.
Substitutions
- Replace Fresh basil with Fresh parsley for a different herb finish.
- Replace Lemon with Lime for a slightly more aromatic, sharper dressing.
- Replace Extra virgin olive oil with Virgin olive oil for a milder flavour.
Storage
