Latin Black Bean Bowl with Rice, Avocado and Lime
Why this recipe works
- Warm, savoury base: Garlic, cumin and smoked paprika give the beans and sweetcorn enough depth to carry the bowl without a long cooking time.
- Freshness and acidity: Lime, tomato and salsa cut through the starchiness of the rice and beans, keeping each serving bright and balanced.
- Easy to prep in parts: The rice and beans can be cooked ahead, while the avocado, tomato, coriander and lime are best added fresh before serving.

Timing notes
- Let the rice steam: Keeping the lid on after cooking allows the rice to finish gently and gives a fluffier texture when forked through.
- Add fresh toppings last: Avocado and tomato are best added just before serving so they stay clean-tasting, colourful and distinct from the warm beans.
Ingredient notes
- Choose a firm tomato: A ripe but firm tomato holds its shape better in the bowl and adds freshness without making the rice watery.
- Use a just-ripe avocado: The avocado should yield slightly when pressed; overripe avocado can turn mushy once mixed with warm rice and beans.
- Salsa sets the final flavour: A chunky salsa adds texture, while a smoother one gives a softer finish; choose the heat level to suit the bowl.
Make-ahead tips
- Keep warm and fresh elements apart: Store the rice and beans separately from the avocado, tomato, coriander and lime for the best texture when serving later.
- Reheat gently with moisture: Warm the rice and beans with a splash of water until piping hot, then finish with the fresh toppings after reheating.
Serving ideas
- Serve with crunch: Tortilla chips or a simple shredded salad work well alongside the soft rice, beans and avocado.
- Finish with extra lime: A final squeeze of lime sharpens the beans and makes the avocado taste fresher.

Instructions
- Rinse the rice in a colander until the water runs mostly clear. Tip into a saucepan with 300 ml of the water and 0.5 tsp of the fine sea salt, bring to the boil, then cover and cook on the lowest heat for 12 minutes. Remove from the heat and leave, covered, for 10 minutes to steam.
- Meanwhile, drain and rinse the black beans, and drain the sweetcorn. Finely grate the garlic, then warm the olive oil in a saucepan over a medium heat and cook the garlic for 30 seconds until fragrant. Stir in the cumin and smoked paprika for 20 seconds, then add the beans, sweetcorn and remaining 150 ml water; simmer for 6 to 8 minutes until hot and lightly saucy, seasoning with the remaining salt and the black pepper.
- Dice the tomatoes and cut the avocado into chunks. Finely chop the coriander and cut the lime into wedges. Taste the beans and adjust with a squeeze of lime if you like it brighter.
- Fluff the rice with a fork and divide between two bowls. Spoon the spiced beans and sweetcorn over the rice, then top with the tomato and avocado. Finish with coriander, a spoon of salsa, and serve with the remaining lime wedges for squeezing over.

- If serving later, keep the avocado and tomato separate and add them at the last minute so they stay fresh.
- If you are cooking for anyone vulnerable to food poisoning, make sure the beans are simmered until piping hot throughout before serving.
Substitutions
- Replace Smoked paprika with Sweet paprika for a milder, less smoky flavour.
- Replace Fresh coriander with Fresh flat-leaf parsley if you prefer a less citrusy herb.
- Replace Salsa with Tomato sauce for a smoother, less chunky topping.
Storage
- Refrigerate up to 2 days
- Cool the rice and beans quickly, then refrigerate in a sealed container. Store the avocado, tomato, coriander and lime separately and add fresh when serving; reheat the rice and beans in a saucepan with a splash of water until piping hot.
