Enchiladas Verdes con Pollo (Chicken Enchiladas in Green Sauce)
Why this recipe works
- Bright, balanced sauce: Tomatillos give the green sauce its signature tang, with lime added at the end to sharpen the flavour without making it harsh.
- Flavour in every layer: The chicken is seasoned, browned and tossed with onion, coriander and lime before being wrapped, so the filling stays savoury and aromatic beneath the sauce.
- Bubbling, creamy finish: A short bake heats the enchiladas through, while crema and queso fresco add a cool, rich contrast to the tangy green sauce.

Adjust the heat
- For less heat: Choose a milder green chilli and remove the seeds before simmering it with the tomatillos.
- For more heat: Use a hotter green chilli or add a little extra chilli to the sauce, tasting before assembling.
- Keep the sauce rounded: If the sauce tastes too sharp or fiery, a brief simmer after blending will mellow the tomatillos and soften the chilli edge.
Ingredient notes
- Tomatillos: Rinse tomatillos well after removing the husks; their natural stickiness can otherwise give the sauce a slightly tacky feel.
- Corn tortillas: Warm the tortillas just until pliable before filling. This makes them easier to roll and helps prevent splitting.
- Cheese swap: Feta can stand in for queso fresco, but it is saltier and firmer, so use it with a lighter hand if needed.
Texture tips
- Sauce generously, but bake briefly: Coating the tortillas well keeps them tender, while the short bake prevents them from becoming overly soft.
- Shred while warm: Chicken thighs shred more easily while warm and hold moisture well, giving the filling a fuller texture.
- Use chicken breast carefully: Chicken breast works as a leaner swap, but it can dry out if cooked too long, so remove it from the pan as soon as it is cooked through.
Make-ahead tips
- Make components ahead: The sauce and shredded chicken can be prepared in advance, then assembled with warmed tortillas before baking.
- Best texture: For the neatest result, store the filling and sauce separately from the tortillas until you are ready to assemble.
- Freezing: Freeze without the crema and queso fresco if possible, then defrost overnight in the fridge and reheat in a 180°C (355°F) oven until piping hot.

Instructions
- Heat the oven to 200°C (390°F). Peel the onion and garlic; roughly chop the onion and set aside a quarter for the filling, then keep the rest for the sauce. Remove the husks from the tomatillos, then rinse well to remove any stickiness.
- Put the tomatillos, green chilli peppers, the larger portion of onion, garlic and water into a saucepan. Bring to the boil, then simmer for 10 to 12 minutes until the tomatillos are soft and turning olive-green. Take off the heat and cool for 5 minutes.
- Blend the tomatillo mixture until smooth, then stir in half the fine sea salt and a squeeze of lime. Taste and add more lime if you want it sharper. Set the sauce aside.
- Heat the olive oil in a frying pan over medium-high heat. Season the chicken thighs with the remaining fine sea salt and black pepper, then cook for 5 to 7 minutes per side until cooked through and lightly browned. Transfer to a board and shred while warm.
- Finely chop the reserved onion quarter and most of the fresh coriander, reserving a little coriander for serving. Toss the shredded chicken with the chopped onion, chopped coriander and a small squeeze of lime. Pour about a third of the green sauce into a baking dish and spread it out.
- Warm the corn tortillas briefly in a dry frying pan, 10 to 15 seconds per side, until pliable. Fill each tortilla with the chicken mixture, roll up, and place seam-side down in the dish. Pour over the remaining sauce, making sure the tortillas are well coated.
- Bake for 12 to 15 minutes until hot and bubbling at the edges. Spoon over the mexican crema and crumble over the queso fresco. Finish with the reserved coriander and serve with extra lime wedges.
Recipe notes
Tips
- If you prefer a smoother, less sharp sauce, simmer the blended tomatillo sauce for 3 to 5 minutes to mellow it before assembling.
- To stop the tortillas cracking, keep them covered with a clean tea towel as you warm and fill them.
- If serving anyone who is pregnant, elderly, or immunocompromised, ensure the chicken is cooked until piping hot throughout.
Substitutions
- Replace mexican crema with sour cream for a similar tang and richness.
- Replace queso fresco with feta cheese for a saltier, firmer finish.
- Replace chicken thighs with chicken breast for a leaner filling; take care not to overcook it.
Storage
- Refrigerate up to 3 days
- Cool completely, then refrigerate in a sealed container for up to 3 days. Freeze (ideally before adding mexican crema and queso fresco) for up to 2 months; defrost overnight in the fridge and reheat in a 180°C (355°F) oven until piping hot.
