Empanada-Inspired Beef Bake with Puff Pastry

Taking its cue from the flavours of beef empanadas, this bake turns the familiar pastry-and-filling idea into a generous oven dish for slicing at the table. A savoury minced beef mixture is cooked with onion, red pepper, garlic, ripe tomato, cumin and smoked paprika, with green olives cutting through the richness in the way they often do in Latin American-style meat fillings. Instead of individual hand pies, a sheet of puff pastry forms a crisp, golden lid over the saucy filling, giving the dish the comfort of a pie with less assembly. It is hearty enough for dinner, easy to portion, and well suited to serving with a simple salad or vegetables alongside.

Why this recipe works

  • Layered savoury filling: Softened onion, pepper, garlic, cumin, smoked paprika, tomato and olives build a rich filling with sweetness, warmth and briny contrast.
  • Crisp pastry finish: Cooling the filling before topping helps the puff pastry stay flaky rather than steaming from underneath.
  • Easy to portion: Baking the filling as one dish makes it simpler to serve than individual empanadas, while keeping the familiar beef-and-pastry appeal.

Timing notes

  • Cool before adding pastry: Let the beef filling cool until only warm before laying over the puff pastry; a hot filling can soften the butter in the pastry and reduce lift.
  • Rest before slicing: A short rest after baking helps the filling settle slightly, making cleaner portions without losing the crisp top.
  • Best served hot: The pastry is at its crispest soon after baking, once the filling has had a few minutes to settle.

Ingredient notes

  • Choose all-butter puff pastry: All-butter pastry gives a richer flavour and a more delicate flake than pastry made with vegetable fats.
  • Smoked paprika matters: Smoked paprika adds gentle depth to the beef filling; sweet paprika gives a milder, less smoky result.
  • Use ripe tomatoes: Ripe tomatoes break down more easily into the filling, helping it become saucy without needing extra liquid.

Common mistakes

  • Leaving the filling too wet: Simmer until the tomatoes have softened and the mixture looks saucy but not watery, otherwise the pastry base can turn soft.
  • Adding pastry too early: Do not cover the filling straight from the pan; the pastry needs a warm, not hot, surface to puff well.
  • Not checking the centre: The filling should be piping hot throughout before serving; if using a thermometer, the centre should reach at least 75°C (165°F).

Make-ahead tips

  • Make the filling ahead: The beef filling can be cooked in advance, cooled and refrigerated, then topped with pastry just before baking.
  • Freeze in portions: Cool completely, portion and freeze for easier reheating; defrost overnight in the fridge before warming through.
  • Reheat in the oven: Reheat at 180°C (355°F) until piping hot so the pastry has a chance to re-crisp.

  1. Heat the oven to 200°C (390°F). Finely chop the onion and pepper, and crush the garlic.
  2. Heat the olive oil in a frying pan over medium heat, then cook the onion and pepper for 6 to 8 minutes until softened. Stir in the garlic for 1 minute until fragrant.
  3. Add the minced beef and cook for 6 to 8 minutes, breaking it up, until browned with no pink remaining. Stir in the ground cumin, smoked paprika, fine sea salt and black pepper.
  4. Chop the tomatoes and stir them into the pan with the olives. Simmer for 8 to 10 minutes until the tomatoes soften and the mixture looks saucy but not watery.
  5. Tip the filling into a baking dish and spread it into an even layer. Leave it to cool for 10 minutes so the pastry stays flaky.
  6. Lay the puff pastry over the dish and tuck the edges just inside the rim. Beat the egg and brush it over the pastry, then cut a few small slits in the top to let steam escape.
  7. Bake for 25 to 30 minutes until the pastry is puffed and deep golden. Rest for 5 minutes, then slice and serve.

Tips

  • For the crispest lid, make sure the filling is only warm, not hot, before adding the puff pastry.
  • If you have a thermometer, the centre of the filling should be at least 75°C (165°F) before serving.
  • If serving to pregnant people, young children, older adults, or anyone immunocompromised, use a pasteurised egg for the egg wash.

Substitutions

  • Replace the green pitted olives with black pitted olives for a milder, fruitier flavour.
  • Replace the red pepper with yellow pepper for a sweeter filling.
  • Replace the smoked paprika with sweet paprika for a less smoky finish.

Storage

  • Refrigerate up to 3 days
  • Cool completely, then cover and refrigerate for up to 3 days. Reheat in a 180°C (355°F) oven for 15 to 20 minutes until piping hot and the pastry re-crisps; freezing is best in portions, then defrost overnight in the fridge before reheating.
