Paletas de Mango con Chile (Mango Chilli Ice Lollies)
Why this recipe works
- Bright and refreshing: Ripe mango gives the lollies natural fruit sweetness, while lime keeps the finish fresh rather than heavy.
- Balanced sweetness: A little salt and citrus sharpen the mango flavour and stop the sugar from tasting flat.
- Fast hands-on work: The mixture is blended in minutes, then the freezer does the rest.
- Easy to adjust: The chilli can be kept gentle or increased slightly depending on how much warmth you want against the fruit.

Adjust the heat
- For a gentler lolly: Use less chilli and let the mango and lime lead; this is best for children or anyone sensitive to heat.
- For more warmth: Add extra chilli gradually, tasting the purée before freezing so the heat stays balanced.
- Keep the fruit in focus: The chilli should lift the mango rather than dominate it; if it tastes too sharp, a touch more sweetness can soften the edge.
Timing notes
- Freeze until fully solid: Allow the lollies to freeze completely before unmoulding, especially if the mango purée is thick.
- Let them loosen briefly: If the lollies are very hard, stand them at room temperature for a minute or two before serving.
Ingredient notes
- Use ripe mango: Soft, fragrant mango gives the smoothest texture and the strongest fruit flavour once frozen.
- Taste the lime: Juicy limes vary in sharpness, so taste the blend before freezing and adjust the citrus only if the mango needs more lift.
- Choose chilli carefully: A hot chilli powder gives direct warmth; smoked hot paprika creates a softer, smoky variation.
Authenticity notes
- Paleta-style treat: Paletas are Mexican frozen fruit pops, often built around bold fruit flavours and simple sweet-sour contrasts.
- Mango, lime, and chilli: The combination of sweet mango, citrus, salt, and chilli is a familiar Mexican flavour profile for fruit-based snacks.

Instructions
- Put the water, caster sugar and fine sea salt in a blender and blend briefly to help the sugar dissolve. If your blender struggles with warm liquids, stir the sugar into the water in a jug first, then pour it in.
- Peel the mangoes, cut the flesh away from the stones, and add it to the blender. Squeeze in the lime juice and add the hot chilli powder.
- Blend until completely smooth, then taste and add a little more chilli powder if you want more warmth. Pour into lolly moulds, leaving a little headspace for expansion, then insert the sticks.
- Freeze until solid, at least 6 hours. To unmould, dip the moulds briefly in warm water and pull the lollies out gently.
Recipe notes
Tips
- For the smoothest texture, blend for a full 45 to 60 seconds so the mango is completely puréed.
- If serving to children or anyone sensitive to heat, keep the chilli at 0.25 tsp and let the fruit and lime do the work.
Substitutions
- Replace caster sugar with the same amount of honey for a rounder sweetness (note this makes the recipe non-vegan).
- Replace hot chili powder with a smaller amount of smoked hot paprika for a gentler, smoky warmth.
Storage
- Keep the lollies in the freezer in their moulds or transferred to a sealed container for up to 2 months. Let them sit at room temperature for 1 to 2 minutes before serving if very hard.
