Semifreddo al Pistacchio (Italian Pistachio Frozen Dessert)
Why this recipe works
- Soft, mousse-like texture: Whipped double cream gives the frozen mixture a light structure, so it slices cleanly without becoming hard or icy.
- Classic semifreddo method: Warming the egg yolks and sugar over gentle steam creates a pale, ribboned base that helps the dessert set smoothly.
- Balanced nutty flavour: Pistachio paste, vanilla, sugar and fine sea salt work together to keep the flavour rounded rather than simply sweet.

Timing notes
- Allow enough freezing time: The semifreddo needs at least 6 hours in the freezer to become firm and sliceable, so it is best planned ahead.
- Soften briefly before serving: After slicing, let the portions stand for 2 to 3 minutes so the texture relaxes from firm and frozen to soft and mousse-like.
Ingredient notes
- Work the pistachios into a paste: Blitz the pistachios until they begin to clump rather than stopping at a dry powder; this gives a smoother, more integrated pistachio flavour.
- Use well-chilled double cream: Cold double cream whips more reliably and helps hold the airy structure that gives semifreddo its light finish.
- Choose unsalted pistachios: Unsalted shelled pistachios keep the flavour clean and allow the fine sea salt in the recipe to control the seasoning.
Common mistakes
- Avoid direct heat on the egg base: Keep the bowl above, not touching, the simmering water so the yolks warm gently without scrambling.
- Do not over-whip the cream: Whip only to soft peaks; stiff cream is harder to fold in and can make the finished semifreddo feel heavy.
- Fold gently: Once the cream is added, use a light folding motion to preserve air in the mixture and avoid a dense set.
Make-ahead tips
- Make it in advance: This dessert is well suited to preparing ahead; keep it well wrapped in the freezer and slice when needed.
- Serve after a full freeze: A longer freeze gives the loaf time to set evenly, making it easier to lift from the tin and cut into neat slices.

Instructions
- Line a loaf tin with a strip of baking paper, leaving plenty of overhang so you can lift the semifreddo out later. Set the tin in the freezer while you make the mixture.
- Tip the pistachios into a food processor and blitz until very finely ground and starting to clump, scraping down as needed. You are aiming for a thick, paste-like texture rather than a dry powder.
- Set a heatproof bowl over a saucepan of barely simmering water, making sure the bowl does not touch the water. Add the egg yolks, caster sugar and fine sea salt, then whisk constantly for 6 to 8 minutes until pale, thick and warm, and the whisk leaves ribbons that sit on the surface for a few seconds.
- Remove the bowl from the heat and whisk in the pistachio paste and vanilla extract until smooth. Keep whisking for 2 to 3 minutes to cool it slightly and keep the mixture airy.
- In a separate bowl, whip the double cream to soft peaks so it holds its shape but still looks billowy. Do not take it to stiff peaks or the semifreddo will set heavy.
- Fold one third of the whipped cream into the pistachio egg mixture to loosen it, then gently fold in the remaining cream in two additions until no streaks remain. Spoon into the chilled loaf tin and smooth the top.
- Freeze for at least 6 hours, or until firm and sliceable. To serve, lift out using the paper overhang, slice with a warm knife, and let the slices sit for 2 to 3 minutes to soften to a mousse-like texture.
Recipe notes
Tips
- For the cleanest slices, dip the knife in hot water, wipe dry, then cut; repeat between slices.
- If serving to pregnant people, young children, older adults, or anyone immunocompromised, use pasteurised egg yolk products where available, as the yolks are gently heated but not fully cooked.
Substitutions
- Replace Vanilla extract with vanilla bean paste for a more pronounced vanilla flavour.
- Replace Pistachios with almonds for an almond semifreddo, keeping the method the same.
Storage
- Refrigerate up to 1 days
- Keep frozen, well wrapped, for up to 2 weeks for best texture. Transfer to the fridge for 20 to 30 minutes before slicing, or slice straight from frozen with a warm knife and let stand briefly before serving.
