Classic Meatloaf with Ketchup Glaze
Why this recipe works
- Familiar comfort-food flavour: Worcestershire sauce, softened onion and a tangy ketchup glaze give the loaf its classic savoury-sweet character.
- Tender, moist crumb: Hydrating the breadcrumbs with milk before mixing helps keep the meatloaf soft rather than dry or compact.
- Straightforward method: The loaf pan keeps the shape neat, while the glaze is added near the end so it can caramelise without burning.

Texture tips
- Mix gently: Combine the beef mixture only until the ingredients are evenly distributed; heavy mixing can make the loaf dense.
- Let it rest before slicing: Resting in the pan allows the juices to settle, giving cleaner slices and a more succulent texture.
- Glaze near the end: Brushing on the ketchup glaze after the loaf has started to firm up helps it set into a glossy, lightly caramelised topping.
Common mistakes
- Adding hot onion to the mix: Let the sautéed onion cool slightly before mixing so it does not start cooking the egg in the bowl.
- Skipping the breadcrumb soak: The milk-soaked breadcrumbs are important for moisture; adding dry breadcrumbs straight to the meat can produce a firmer loaf.
- Slicing too soon: Cutting immediately after baking can make the slices crumble and release more juices onto the board.
Make-ahead tips
- Assemble ahead: The meatloaf mixture can be shaped in the pan in advance, then covered and refrigerated until ready to bake.
- Freeze in slices: Cool completely, slice, then freeze portions so they can be defrosted and reheated individually.
- Reheat gently: Defrost overnight in the fridge, then reheat in a 180°C (355°F) oven until piping hot throughout.
Ingredient swaps
- For similar savoury depth: Soy sauce can replace Worcestershire sauce if that is what you have available.
- For a tangier crumb: Buttermilk can be used instead of whole milk for a slightly softer, gently tangy result.
- Adjust the glaze to taste: Use a little less brown sugar for a sharper ketchup glaze, or slightly more for a sweeter finish.

Ingredients
Instructions
- Heat the oven to 180°C (355°F). Lightly grease a loaf pan. Finely chop the onion.
- Warm a frying pan over medium heat and cook the onion with a pinch of the salt until softened and translucent, 6 to 8 minutes. Tip onto a plate and leave to cool slightly so it does not start cooking the egg.
- In a mixing bowl, stir together the breadcrumbs and whole milk and leave for 2 minutes to hydrate. Add the minced beef, eggs, Worcestershire sauce, remaining salt and the black pepper, then add the cooled onion. Mix gently with your hands just until combined; do not overwork.
- Pack the mixture into the loaf pan, pressing lightly to remove large air pockets and smoothing the top. Bake for 45 minutes. The loaf should be starting to firm up and pull slightly from the sides.
- Stir the ketchup and brown sugar together, then brush it over the top of the meatloaf. Return to the oven and bake for 15 minutes, until glossy and lightly caramelised at the edges. The meatloaf should be piping hot throughout.
- Rest the meatloaf in the pan for 10 minutes to help it slice cleanly. Lift out, slice thickly, and serve. Spoon any extra glaze from the pan over the slices if you like.
Recipe notes
Tips
- For the most tender texture, mix the meatloaf just until everything is evenly combined; overmixing makes it dense.
- If the top is browning too quickly once glazed, loosely cover with foil for the final 5 minutes.
- Food safety: if serving to pregnant people, young children, older adults, or anyone immunocompromised, ensure the meatloaf is cooked until piping hot throughout.
Substitutions
- Replace Worcestershire sauce with soy sauce for a similar savoury depth.
- Replace whole milk with buttermilk for a slightly tangier, softer crumb.
Storage
- Refrigerate up to 3 days
- Cool completely, then refrigerate in a sealed container for up to 3 days. Freeze sliced portions for up to 2 months; defrost overnight in the fridge and reheat in a 180°C (355°F) oven until piping hot.
