Carne Asada (Marinated Steak with Rice and Black Beans)

Carne asada brings the bold, charred character of marinated steak to a complete dinner plate. Traditionally centred on quickly grilled or seared beef, the dish is recognised for its citrusy marinade, savoury spices and juicy slices cut thinly against the grain. Here, flank steak is paired with fluffy long-grain rice and black beans simmered with onion and coriander, making it hearty without losing freshness. Salsa, avocado and extra herbs finish the plate with acidity, creaminess and colour, turning a simple steak dinner into a well-rounded Mexican-inspired meal.

Why this recipe works

  • Fast, layered flavour: Lime, garlic, cumin and ancho chilli season the steak quickly, while a hot sear adds smoky char.
  • Efficient timing: The steak marinates while the rice starts cooking, keeping the full plate practical for a weeknight dinner.
  • Complete, flexible plate: Rice, black beans, salsa and avocado turn the sliced steak into a balanced meal, with freshness and richness in each serving.

Adjust the heat

  • For a milder version: Use smoked paprika instead of ancho chilli powder and choose a mild salsa.
  • For more heat: Use a hotter salsa or add extra chilli warmth to the marinade or beans.
  • Keep it balanced: Retain the lime and salsa for acidity; they stop the chilli heat from tasting heavy.

Timing notes

  • Short marinade: The lime-based marinade works quickly, so use the rice cooking time rather than extending the marination unnecessarily.
  • Cook in sequence: Start the rice first, simmer the beans while it steams, then sear the steak last so it reaches the table juicy.
  • Finish at the end: Add avocado, salsa and fresh coriander just before serving to keep the plate bright and fresh.

Common mistakes

  • Not heating the pan enough: The frying pan should be very hot before the steak goes in; low heat prevents proper charring and can make the meat cook unevenly.
  • Skipping the rest: Resting the steak before slicing helps keep the juices in the meat rather than on the board.
  • Slicing the wrong way: Flank steak can feel chewy if cut with the grain, so slice it thinly against the grain.

Make-ahead tips

  • Store separately: Keep the steak, rice and beans in separate airtight containers so each component reheats cleanly.
  • Reheat gently: Warm the rice and beans with a splash of water, and reheat the steak briefly in a hot pan to avoid overcooking it.
  • Prep fresh toppings later: Slice the avocado and add salsa and coriander shortly before serving for the best texture and flavour.

  1. Finely grate or crush the garlic into a bowl. Squeeze in the juice of both limes, then stir in the ground cumin, ancho chili powder, 2 tbsp olive oil and 1 tsp fine sea salt.
  2. Add the beef flank steak and turn to coat well. Leave to marinate at room temperature for 15 minutes while you start the rice and beans.
  3. Rinse the long-grain white rice until the water runs mostly clear. Tip into a saucepan with 400 ml water and 0.5 tsp fine sea salt, bring to the boil, then cover and cook on the lowest heat for 12 minutes. Take off the heat and leave covered for 10 minutes, then fluff with a fork.
  4. Peel and finely chop the yellow onion, then pick the fresh coriander leaves and finely chop the stems. Warm 1 tbsp olive oil in a saucepan over medium heat, add the onion with a pinch of fine sea salt and cook for 6 to 8 minutes until softened.
  5. Add the canned black beans (including their liquid) and the chopped coriander stems, then simmer for 5 minutes until hot and slightly thickened. Taste and season with a little more fine sea salt if needed, then stir through half the coriander leaves.
  6. Heat a large frying pan over high heat until very hot. Lift the steak from the marinade, letting the excess drip off, then sear for 3 to 5 minutes per side until well charred outside and still juicy within. Rest on a board for 5 minutes before slicing thinly against the grain.
  7. Slice the avocado and set out the salsa. Serve the sliced steak with the rice and beans, then finish each plate with a spoonful of salsa, the avocado and the remaining coriander leaves.

Tips

  • For the juiciest slices, always cut the beef flank steak thinly against the grain after resting.
  • If cooking for anyone who is pregnant, elderly, or immunocompromised, cook the steak until well done and piping hot throughout.

Substitutions

  • Replace Beef flank steak with Beef skirt steak for a similar quick-searing cut.
  • Replace Ancho chili powder with Smoked paprika for a milder, smoky flavour.
  • Replace Salsa with Salsa verde for a brighter, tangier finish.

Storage

  • Refrigerate up to 3 days
  • Cool the steak, rice and beans quickly, then refrigerate in separate airtight containers. Reheat the rice and beans in a saucepan with a splash of water until piping hot; warm the steak briefly in a hot pan so it does not overcook. Add salsa, avocado and fresh coriander just before serving.
