Latin-Style Spicy Black Bean Rice Bowl with Avocado and Lime
Why this recipe works
- Smoky depth: Softened onion, garlic, cumin and chipotle give the beans a savoury, aromatic base before they simmer.
- Glossy beans: Simmering the beans with their liquid helps create a thick, cohesive sauce that coats the rice.
- Fresh finish: Lime, coriander and avocado balance the warmth of the beans with brightness, creaminess and freshness.

Adjust the heat
- Make it milder: Use less chipotle powder or replace it with smoked paprika for smokiness without as much heat.
- Add more heat: Increase the chipotle gradually at the end of cooking so the heat stays balanced rather than harsh.
Texture tips
- For creamier beans: Mash a spoonful of beans against the side of the pan as they simmer, then stir them back through the sauce.
- Keep the rice fluffy: Let the cooked rice stand covered off the heat before fluffing, which helps the grains finish steaming evenly.
Make-ahead tips
- Store separately: Keep the rice and bean mixture in separate airtight containers, then add avocado, lime and coriander just before serving.
- Reheat gently: Warm the beans with a splash of water until piping hot, and reheat the rice with a little water to restore moisture.
Ingredient swaps
- Milder smoky flavour: Smoked paprika can replace chipotle powder if you want less heat while keeping the smoky character.
- Use brown rice: Brown rice works well, but it needs a longer cooking time and a little more water than white rice.

Ingredients
Instructions
- Rinse the rice in a colander until the water runs mostly clear. Tip into a saucepan with 300 ml water and 0.5 tsp of the fine sea salt, bring to the boil, then cover and cook on the lowest heat for 12 minutes. Remove from the heat and leave covered for 10 minutes, then fluff with a fork.
- Meanwhile, peel and finely chop the yellow onion. Warm the extra virgin olive oil in a large frying pan over a medium heat, then cook the onion with a pinch of the remaining salt for 6 to 8 minutes until soft and lightly golden. Crush in the garlic and cook for 1 minute more.
- Stir in the ground cumin and chipotle powder and cook for 30 seconds until fragrant. Add the canned black beans (with their liquid) and 100 ml water, then simmer for 8 to 10 minutes, stirring occasionally, until thickened and glossy. Stir in the sweet corn kernels for the last 2 minutes to warm through, then season with the remaining salt and the black pepper.
- Halve, stone and slice the avocado. Cut the lime into wedges and roughly chop the fresh coriander.
- Divide the rice between two bowls and spoon the spicy beans and corn over the top. Finish with the avocado, a squeeze of lime, and the fresh coriander. Serve straight away while hot.
Recipe notes
Tips
- For a thicker, creamier texture, mash a spoonful of the beans against the side of the pan during simmering, then stir back through.
- If you are serving anyone sensitive to spice, start with half the chipotle powder and add more at the end to taste.
- Food safety: if serving to vulnerable groups, make sure the bean mixture is simmered until piping hot throughout.
Substitutions
- Replace Chipotle powder with Smoked paprika for a milder, smoky flavour.
- Replace Long-grain white rice with Brown rice, allowing extra cooking time and a little more water.
Storage
- Refrigerate up to 3 days
- Store the rice and bean mixture separately in airtight containers. Cool quickly, then refrigerate; reheat the beans in a saucepan with a splash of water until piping hot, and reheat the rice in the microwave with a splash of water. Add avocado, lime and fresh coriander just before serving.
