Chicken Burrito Bowl with Rice, Black Beans and Avocado

A chicken burrito bowl takes the familiar fillings of a burrito and serves them over rice rather than wrapped in a tortilla, making it easy to layer flavour, texture and freshness in one bowl. Here, fluffy long-grain rice forms the base for cumin-spiced chicken thigh, warmed black beans and sweetcorn, with cherry tomatoes and firm avocado adding brightness and creaminess. A lime, zest and coriander dressing keeps the bowl lively rather than heavy. It is a practical lunch or light dinner option, with the hot components prepared separately from the fresh toppings so the bowl stays well textured when assembled.

Why this recipe works

  • Layered flavour: Cumin, cayenne and browned chicken add savoury depth, while lime and coriander keep the bowl bright.
  • Balanced textures: Fluffy rice, creamy avocado, tender chicken, beans, corn and fresh tomatoes give each bowl contrast without extra complexity.
  • Practical for lunch prep: The cooked rice, chicken, beans and corn can be stored together, with the avocado, tomatoes and dressing added just before serving.

Adjust the heat

  • For a milder bowl: Reduce the cayenne or leave it out, keeping the cumin for warmth without noticeable chilli heat.
  • For more heat: Increase the cayenne gradually and sharpen the finished bowl with extra lime juice if it tastes too heavy.

Make-ahead tips

  • Keep fresh toppings separate: Store the cooked elements apart from the tomatoes, avocado and dressing so the bowl stays fresh when assembled.
  • Reheat only the warm base: Warm the rice, chicken, beans and corn until piping hot, then add the avocado, tomatoes and lime dressing after reheating.

Ingredient swaps

  • Use chicken breast: Chicken breast works as a leaner option, but cook it a little more carefully so it stays tender.
  • Swap the rice: Brown rice can replace white rice; cook it according to its packet instructions and allow extra time.
  • Change the herb: Flat-leaf parsley gives a milder, greener finish if coriander is not to your taste.

Texture tips

  • Keep the rice fluffy: Leave the lid on while the rice rests, then fluff gently with a fork just before building the bowls.
  • Avoid dry chicken: Pat the chicken dry before seasoning so it browns well, then stop cooking once the pieces are cooked through.

  1. Rinse the rice in a colander until the water runs mostly clear. Tip into a saucepan with 320 ml water and 0.75 tsp of the fine sea salt, bring to the boil, then cover and cook on the lowest heat for 12 minutes. Take off the heat and leave, covered, for 10 minutes, then fluff with a fork.
  2. While the rice cooks, pat the chicken dry and cut into bite-size pieces. Toss with the ground cumin, cayenne pepper, black pepper and the remaining 0.5 tsp fine sea salt. Heat 1 tbsp of the extra virgin olive oil in a large frying pan over medium-high heat.
  3. Add the chicken and cook for 6 to 8 minutes, turning, until browned and cooked through. Tip onto a plate and keep warm. If the pan looks dry, add a splash of water to loosen any browned bits.
  4. Drain and rinse the canned black beans, then add them to the same pan with the sweet corn kernels. Cook for 3 to 4 minutes, stirring, until hot. Remove from the heat.
  5. Halve the cherry tomatoes and slice the avocado. Finely chop the fresh coriander. Zest the lime, then squeeze the juice into a mixing bowl.
  6. Whisk the lime juice with the remaining 1 tbsp extra virgin olive oil and the lime zest, then stir in most of the coriander, reserving a little for the top. Divide the rice between two bowls and spoon over the chicken, beans and corn. Add the tomatoes and avocado, drizzle with the dressing, and finish with the reserved coriander.

Recipe notes

Tips

  • For the fluffiest rice, keep the lid on during cooking and resting, then fluff gently with a fork just before serving.
  • If you like more heat, increase the cayenne pepper to 0.5 tsp and balance it with a little extra lime juice.
  • For food safety, make sure the chicken is cooked all the way through with no pink remaining, and serve the bowl promptly once assembled.

Substitutions

  • Replace chicken thighs with chicken breast for a leaner bowl; reduce the cooking time slightly to avoid drying it out.
  • Replace fresh coriander with fresh flat-leaf parsley for a milder, more herbaceous dressing.
  • Replace long-grain white rice with brown rice, cooking it according to the packet instructions and allowing extra time.

Storage

  • Refrigerate up to 2 days
  • Store rice, chicken, and the beans and corn together in an airtight container for up to 2 days. Keep the cherry tomatoes, avocado, and dressing separate, then assemble just before eating; reheat the hot components in the microwave until piping hot.
