Tortilla Española (Spanish Potato Omelette)
Why this recipe works
- Gentle potato cooking: Cooking the potatoes slowly in olive oil softens them without browning, giving the tortilla its characteristic tender layers.
- Simple ingredients, full flavour: Potatoes, eggs, onion and olive oil create a deeply savoury dish without needing a long ingredient list.
- Flexible serving: The tortilla slices cleanly and can be served warm or at room temperature, making it practical for dinner, packed lunches or tapas-style sharing.

Authenticity notes
- Spanish home-style dish: Tortilla española is a staple of Spanish home cooking, often served in wedges as a simple meal or cut into smaller pieces for tapas.
- Onion is a common variation: Some versions include onion for sweetness and moisture, while others keep the tortilla to potato, egg, oil and salt.
Timing notes
- Let the potato and egg mixture stand: A short rest before cooking allows the hot potatoes to absorb some egg, helping the tortilla set into cohesive layers.
- Serve warm or at room temperature: Tortilla española is especially useful because it holds well after cooking and does not need to be served straight from the pan.
Texture tips
- Keep the potatoes tender: Use moderate, steady heat and turn the potatoes often so they soften in the oil rather than crisping or browning.
- For a softer centre: Stop cooking while the centre still has a slight wobble; it will continue to firm as the tortilla rests.
Make-ahead tips
- Make ahead for easy serving: Cook the tortilla in advance, cool it completely, then refrigerate it in a sealed container.
- Reheat gently: Warm slices in a nonstick pan over low heat until piping hot, or serve at room temperature if appropriate.

Ingredients
Instructions
- Peel the potatoes, then slice them into thin rounds, about 3 mm thick. Halve and thinly slice the onion.
- Heat the olive oil in a nonstick frying pan over medium-low heat. Add the potatoes, onion and 1 tsp of the fine sea salt, then cook gently for 18 to 22 minutes, stirring and turning often, until the potatoes are very tender but not browned.
- Meanwhile, whisk the eggs in a mixing bowl with the remaining salt, black pepper and smoked paprika. When the potatoes are ready, use a slotted spoon to transfer them to the eggs, then let the mixture stand for 5 minutes so the potatoes absorb some egg.
- Pour off all but about 1 tbsp of the oil from the pan and return it to medium-low heat. Add the egg and potato mixture, spread it evenly, then cook for 6 to 8 minutes until the edges are set and the centre is just slightly runny when you shake the pan.
- Flip the tortilla: slide it onto a large plate, invert the pan over the plate, then turn both over to return the tortilla to the pan. Cook for 3 to 5 minutes more until set through and golden, then rest for 3 minutes before slicing into wedges.
Recipe notes
Tips
- Keep the heat low and stir often while cooking the potatoes so they soften in the oil without taking on much colour.
- For a slightly softer centre, stop cooking when the middle still has a gentle wobble; it will continue to set as it rests.
- Eggs should be cooked until set; if serving to pregnant people, young children, older adults, or anyone immunocompromised, use eggs stamped with the British Lion mark.
Substitutions
- Replace Yukon Gold potato with red potato for a slightly firmer texture.
- Replace smoked paprika with ground paprika for a milder, less smoky flavour.
Storage
- Refrigerate up to 3 days
- Cool completely, then refrigerate in a sealed container. Serve at room temperature, or reheat slices in a nonstick pan over low heat until piping hot.
