Frittata di Patate (Potato, Onion and Parmesan Frittata)

Frittata di patate is a homely Italian egg dish that turns potatoes, onion and cheese into a satisfying sliceable meal. The potatoes give it substance and a tender bite, while slowly softened onion and parmesan add savoury depth without making the dish heavy. Unlike an omelette, a frittata is cooked more gently and served in wedges, making it just as useful for lunch, a simple supper or part of an antipasti-style spread. Resting it briefly before slicing helps the eggs settle, so the texture stays soft and cohesive rather than dry.

Why this recipe works

  • Classic frittata method: Cooking the eggs gently in the pan helps the frittata set without becoming dry or rubbery.
  • Simple, savoury depth: Soft onion, olive oil, parmesan and black pepper give the mild potatoes a fuller, more rounded flavour.
  • Flexible serving: The frittata can be served warm or at room temperature, making it useful for lunches, picnics or make-ahead meals.

Timing notes

  • Rest before slicing: Let the frittata stand briefly after cooking so the eggs finish setting and the slices hold their shape.
  • Serve warm or room temperature: This style of frittata is not dependent on being served straight from the pan; it remains satisfying once cooled slightly.

Texture tips

  • Keep the eggs tender: Use a low-medium heat once the egg mixture goes into the pan; strong heat can brown the base before the centre has set.
  • For cleaner slices: Allow the centre to lose most of its wobble, then finish setting off the heat before cutting.

Ingredient notes

  • Choose the right potato: Yukon Gold potatoes are well suited here because they hold their shape while still giving a creamy bite.
  • Use a flavourful hard cheese: Parmesan adds savoury depth without overwhelming the eggs; pecorino romano gives a sharper, saltier variation.

Make-ahead tips

  • Good for advance cooking: Cook the frittata ahead, cool it completely and refrigerate in a sealed container for up to 3 days.
  • Reheat gently: Warm slices in a frying pan over a low heat or in a 180°C (355°F) oven until piping hot, rather than using fierce heat.

  1. Peel the potatoes and cut into 1.5 cm cubes. Put them in a large pot, cover with cold water, add 0.75 tsp of the salt, and bring to the boil. Simmer for 6 to 8 minutes until just tender, then drain well.
  2. Halve and thinly slice the onion. Warm the olive oil in a large frying pan over a medium heat, then cook the onion with a pinch of salt for 6 to 8 minutes until soft and lightly golden. Add the drained potatoes and cook for 4 to 5 minutes, turning gently, until the edges are lightly coloured.
  3. Meanwhile, whisk the eggs in a bowl with the parmesan, black pepper, the remaining salt, and most of the parsley, reserving a little parsley to finish. Tip the warm potato and onion mixture into the eggs and stir gently to coat. Let it stand for 2 minutes so the potatoes start to absorb the egg.
  4. Return the pan to a low-medium heat and pour in the egg mixture, spreading the potatoes evenly. Cook for 8 to 10 minutes, shaking the pan occasionally, until the edges are set and the centre is just a little wobbly. Take off the heat and leave for 2 minutes to finish setting from the residual heat.
  5. Slide the frittata onto a plate and sprinkle with the reserved parsley. Rest for 2 minutes, then slice and serve warm or at room temperature.

Recipe notes

Tips

  • Keep the heat gentle once the eggs go in; if the base browns too quickly, lower the heat and cook a little longer so the centre sets without drying out.
  • For clean slices, let the frittata rest for a few minutes before cutting so the eggs finish setting.
  • If serving anyone vulnerable to food poisoning, use pasteurised eggs or cook until the centre is fully set.

Substitutions

  • Replace parmesan with pecorino romano cheese for a sharper, saltier finish.
  • Replace fresh parsley with fresh basil for a more aromatic, summery flavour.

Storage

  • Refrigerate up to 3 days
  • Cool completely, then refrigerate in a sealed container. Reheat slices in a frying pan over a low heat or in a 180°C (355°F) oven until piping hot, or serve at room temperature.
