Bacalhau Cakes (Portuguese Salt Cod Fritters)

Portuguese bacalhau cakes turn salted cod and potato into crisp, savoury fritters that are usually served hot with lemon as a snack, appetiser or part of a larger spread. The soaked cod brings a firm, briny depth, while mashed Yukon Gold potato gives the cakes structure and a soft interior. Spring onion, parsley and black pepper keep the flavour fresh without overwhelming the fish. Pan-frying creates the essential golden crust, making these fritters satisfying but not heavy, especially with a final squeeze of lemon to lift the saltiness.

Why this recipe works

  • Crisp outside, soft centre: Pan-frying gives the cakes a golden crust while the potato and cod mixture stays tender inside.
  • Lemon lifts the richness: A squeeze of lemon cuts through the fried exterior and brightens the salty cod.
  • Easy to prepare ahead: The cooked cakes keep well in the fridge or freezer and reheat neatly in a pan or oven.

Ingredient notes

  • Taste before salting: Salted cod varies widely in intensity, so add extra sea salt only after the cod has been soaked, cooked and mixed with the potato.
  • Use a waxy, creamy potato: Yukon Gold potato gives the cakes a smooth, cohesive texture without making the mixture heavy.

Texture tips

  • Let the potatoes steam dry: After draining, allow the potatoes to release excess steam before mashing so the mixture is not too wet.
  • Firm up before frying: If the shaped cakes feel soft or warm, rest them briefly before they go into the pan so they hold their shape better.

Common mistakes

  • Do not crowd the pan: Fry in batches so the cakes brown properly rather than steaming against each other.
  • Keep the heat moderate: Medium heat allows the crust to turn deep golden while the centre heats through evenly.

Make-ahead tips

  • Shape ahead: The cakes can be shaped in advance and kept chilled until ready to fry.
  • Reheat until piping hot: Warm cooked cakes in a frying pan with a little oil, or bake at 200°C (390°F) until hot through.
  • Freeze after frying: Freeze cooked cakes once cooled, then reheat from frozen in the oven for a practical make-ahead appetiser.

  1. Soak the salted cod in a bowl of cold water for 45 minutes, changing the water once halfway through. Drain well.
  2. Meanwhile, peel the potatoes and cut into even chunks. Boil in a large pot of lightly salted water for 12 to 15 minutes, until very tender, then drain and let the steam evaporate for 2 minutes.
  3. Put the cod in the same pot and cover with fresh cold water. Bring to a gentle simmer and cook for 8 to 10 minutes until the fish flakes easily, then drain and cool briefly.
  4. Mash the potatoes until smooth. Flake the cod, removing any skin and bones, then finely slice the spring onions and chop the parsley.
  5. In a mixing bowl, combine the mashed potato, flaked cod, spring onion, parsley, black pepper and the egg. Mix until cohesive, then taste and add the fine sea salt only if needed.
  6. Shape the mixture into small cakes, about 10 to 12 in total, pressing firmly so they hold together. If the mixture feels warm and soft, rest the cakes for 5 minutes so they firm up.
  7. Heat 2 tbsp of the olive oil in a large frying pan over medium heat. Fry the cakes in batches for 3 to 4 minutes per side until deep golden and crisp, adding the remaining oil as needed.
  8. Transfer to a plate and serve hot with the lemon cut into wedges for squeezing. Grind over a little extra black pepper if you like.

Recipe notes

Tips

  • Salt levels vary a lot with salted cod, so taste the mixture before adding the fine sea salt and adjust only at the end.
  • For neat cakes, keep your hands slightly damp when shaping and press the mixture firmly so it does not crack in the pan.
  • If serving to pregnant people, young children, older adults, or anyone immunocompromised, ensure the egg is fully cooked and the cakes are piping hot throughout.

Substitutions

  • Replace Fresh parsley with Fresh dill for a softer, more aromatic herbal note.
  • Replace Olive oil with Canola oil for a more neutral frying flavour.

Storage

  • Refrigerate up to 2 days
  • Cool completely, then refrigerate in a sealed container. Reheat on a frying pan over medium-low heat with a little olive oil for 3 to 5 minutes per side until piping hot, or bake at 200°C (390°F) for 10 to 12 minutes; freeze cooked cakes for up to 2 months and reheat from frozen in the oven.
