Crispy Bhindi (Okra) Bites
Why this recipe works
- Crisp coating: Dry okra and a light chickpea flour coating help the pieces fry up golden rather than clumpy.
- Bright finish: Lemon juice added after frying lifts the spices and balances the richness of the oil.
- Fast snack format: The okra is cut small and cooked in a frying pan, making it practical for a quick starter or side.

Adjust the heat
- For less heat: Replace the hot chilli powder with sweet paprika for colour and warmth without the same level of spice.
- For more heat: Use a hotter chilli powder or add a little extra to the spice coating, keeping the lemon and yoghurt for balance.
Texture tips
- Dry the okra thoroughly: Surface moisture is the main reason okra turns sticky or the flour coating clumps, so dry the pods well before slicing.
- Cook in a single layer: Give the pieces enough space in the pan so they fry rather than steam; work in batches if needed.
- Keep the heat steady: Medium-high heat helps the chickpea flour turn golden while keeping the okra crisp.
Serving ideas
- Cooling dip: Serve with plain yoghurt or Greek yoghurt to soften the chilli heat and add creaminess.
- Fresh lemon: Offer extra lemon wedges at the table so each serving can be sharpened to taste.
- As part of a meal: Pair with dal, rice or flatbreads for a simple vegetarian Indian-style spread.
Common mistakes
- Overfilling the pan: Too much okra in the pan traps steam and softens the coating, so fry in batches if the pieces do not fit comfortably.
- Using wet okra: Rinsed okra must be completely dry before seasoning; otherwise the coating becomes pasty.
- Serving too late: These bites are at their best straight from the pan, while the coating is still crisp.

Ingredients
Instructions
- Rinse the okra and dry it very thoroughly with a clean tea towel. Trim the tops, then slice the pods into bite-size pieces (about 2 cm).
- Put the okra in a mixing bowl and toss with the fine sea salt, ground turmeric, ground cumin and hot chili powder. Sprinkle over the chickpea flour and toss again until every piece is lightly coated; shake off any loose flour back into the bowl.
- Heat the vegetable oil in a large frying pan over a medium-high heat. When the oil shimmers, add the okra in a single layer (cook in batches if needed).
- Shallow-fry, turning with tongs, for 10 to 14 minutes until the coating is golden and the okra is crisp. If the pan looks dry between batches, add a little more of the measured oil as needed.
- Transfer the bhindi bites to a plate and immediately squeeze over some lemon juice to taste. Serve hot with the yogurt on the side for dipping, with extra lemon if you like.
Recipe notes
Tips
- Drying the okra well is the key to crisp results; any surface moisture encourages sliminess and makes the coating clump.
- Keep the heat at medium-high so the chickpea flour cooks and turns golden without soaking up too much oil.
- If serving to pregnant people, young children, older adults, or anyone immunocompromised, use pasteurised yogurt.
Substitutions
- Replace Ground cumin with the same amount of Ground coriander for a slightly brighter, citrusy spice note.
- Replace Hot chili powder with the same amount of Sweet paprika for a milder heat level and a warmer colour.
- Replace Yogurt with Greek yogurt for a thicker, creamier dip.
Storage
- Refrigerate up to 2 days
- Bhindi bites are best eaten straight away. If you have leftovers, cool completely and refrigerate in a sealed container; reheat on a hot dry frying pan for 3 to 5 minutes, tossing, until piping hot and re-crisped.
