Pasta alla Buttera (Tuscan Tomato and Minced Beef Ragù Pasta)
Why this recipe works
- Layered savoury depth: Browning the beef, reducing the red wine and simmering the tomato sauce builds a rounded ragù with richness and depth.
- Sauce that clings: Tossing the ragù with hot pasta and a splash of reserved pasta water helps the sauce coat the noodles instead of sitting separately.
- Hearty but balanced: Egg pasta, beef and Pecorino bring richness, while tomato and wine keep the sauce from feeling heavy.

Authenticity notes
- Tuscan-style character: The combination of beef, tomato, red wine and rosemary gives the dish a rustic central Italian feel rather than a creamy or heavily spiced ragù.
- Pasta choice: Egg pasta nests suit the rich sauce well, but long pasta such as spaghetti gives a lighter texture and still works with the ragù.
Ingredient notes
- Use a drinkable red wine: The wine reduces directly into the sauce, so choose one with clean flavour rather than anything harsh or overly sweet.
- Pecorino for sharper finish: Pecorino Romano adds salty, tangy intensity that cuts through the beef and tomato; parmesan gives a milder, nuttier result.
- Fresh rosemary works best: Fresh rosemary gives a cleaner herbal note. If using a substitute, thyme offers a softer flavour that will not dominate the sauce.
Make-ahead tips
- Make the ragù ahead: The sauce can be cooked in advance, cooled quickly and refrigerated, then reheated gently before tossing with freshly cooked pasta.
- Freeze the sauce, not the dressed pasta: For the best texture, freeze the ragù separately and cook the pasta fresh when serving.
- Reheat gently: Warm the ragù over a low heat with a splash of water if needed, then toss with hot pasta until glossy.
Common mistakes
- Do not rush the onion: Cooking the onion until soft and lightly golden gives the sauce sweetness and depth; high heat can brown it too quickly before it softens.
- Reduce the wine properly: Let the wine simmer down before adding the passata so the sauce tastes rounded rather than sharp.
- Keep some pasta water: Reserved pasta water is the best way to loosen the ragù at the end while keeping the sauce glossy and cohesive.

Ingredients
Instructions
- Put a large pot of water on to boil. Finely chop the onion and finely chop the garlic. Strip the rosemary leaves from the sprigs and finely chop the leaves.
- Warm the olive oil in a large frying pan over a medium heat. Add the onion with a pinch of salt and cook for 8 to 10 minutes until soft and lightly golden, stirring regularly. Stir in the garlic and rosemary and cook for 1 minute until fragrant.
- Add the minced beef and cook over a medium-high heat for 6 to 8 minutes, breaking it up with a wooden spoon, until browned and any liquid has evaporated. Pour in the red wine and simmer for 3 to 4 minutes until reduced by about half. Stir in the passata, bring to a gentle simmer, then cook for 15 minutes until rich and glossy.
- Salt the boiling water, add the egg pasta nests and cook until al dente. Scoop out a mug of pasta water, then drain. Return the pasta to the pot.
- Tip the ragù over the pasta and toss well, loosening with a splash of reserved pasta water if needed. Divide between bowls and finish with grated Pecorino Romano cheese. Serve straight away while the sauce is glossy and the pasta is hot.
Recipe notes
Tips
- For a deeper flavour, let the ragù simmer a little longer on a low heat until it coats the back of a spoon.
- If the sauce thickens too much before the pasta is ready, loosen it with a small splash of reserved pasta water rather than extra wine.
Substitutions
- Replace Egg pasta nest with spaghetti for a lighter, less rich pasta texture.
- Replace Pecorino Romano cheese with parmesan for a milder, nuttier finish.
- Replace Fresh rosemary with fresh thyme for a softer herbal note.
Storage
- Refrigerate up to 3 days
- Cool leftovers quickly, then refrigerate in a sealed container. Reheat the ragù in a frying pan over a low heat with a splash of water until piping hot, then toss with freshly cooked pasta; freezing is best for the sauce rather than dressed pasta.
