Rollade met Jus (Dutch Rolled Pork Roast with Gravy)
Why this recipe works
- Herby, savoury depth: Mustard, garlic and fresh herbs season the outside of the pork while also flavouring the pan juices for the gravy.
- Classic pan jus: The gravy is made directly in the roasting pan, using the browned bits and meat juices for a simple, full-flavoured finish.
- Easy to serve: A rolled and tied roast slices cleanly, making it well suited to family-style dinners or a more formal roast meal.

Timing notes
- Rest before slicing: Rest the pork for 15 minutes after roasting so the juices settle and the slices stay moist.
- Slice close to serving: Keep the roast whole until the gravy is ready, then slice and serve while the jus is hot and glossy.
Ingredient notes
- Use a tied pork loin: A boneless loin that has been rolled and tied cooks evenly and gives the neat spiral slices associated with rollade.
- Stock matters: Because the gravy is simple, a well-seasoned chicken stock gives the jus better depth without needing extra ingredients.
- Fresh herbs give clarity: Fresh rosemary and thyme bring a cleaner, more aromatic flavour to the crust than dried herbs.
Common mistakes
- Avoid drying the pork: Use a thermometer and aim for 63°C (145°F) in the thickest part, or 70°C (160°F) when cooking for higher-risk diners.
- Do not let the pan run dry: If the roasting pan looks dry, add a splash of stock so the juices brown rather than scorch.
- Simmer the gravy gently: After adding the cornflour slurry, keep the jus at a gentle simmer; boiling hard can make the texture less smooth.
Make-ahead tips
- Store pork and gravy apart: Cool the sliced pork and gravy, then refrigerate them in separate airtight containers to keep the meat from becoming soggy.
- Reheat gently: Warm the pork covered in a 180°C (355°F) oven until piping hot, and reheat the gravy slowly with a little water if needed.
- Freezer-friendly: Freeze the cooked pork and gravy for up to 2 months, then defrost overnight in the fridge before reheating.

Instructions
- Heat the oven to 190°C (375°F). Pat the pork dry, then rub all over with the sunflower oil and mustard. Peel and crush the garlic, strip the rosemary and thyme leaves, then mix with the black pepper and fine sea salt and press onto the pork.
- Set the pork in a roasting pan and roast for 55 to 65 minutes, turning the pan once, until the outside is well browned and a thermometer reads 63°C (145°F) in the thickest part. If the pan looks dry at any point, splash in a little of the chicken stock to prevent the juices catching. Transfer the pork to a board and rest loosely covered for 15 minutes.
- Pour off any excess fat from the roasting pan, leaving the browned bits and juices behind. Set the pan over a low heat on the hob, add the remaining chicken stock, and scrape up the sticky bits as it comes to a gentle simmer. Simmer for 3 to 5 minutes to concentrate the flavour.
- In a small bowl, whisk the cornflour with the water until smooth. Whisk the slurry into the simmering pan juices and cook for 1 to 2 minutes until the gravy thickens and turns glossy. Slice the pork and serve with the gravy spooned over.
Recipe notes
Tips
- For the juiciest slices, aim for 63°C (145°F) in the centre, then let the pork rest so the temperature rises slightly and the juices settle.
- Keep the gravy at a gentle simmer after adding the cornflour slurry; a hard boil can make it turn slightly grainy.
- If serving to pregnant people, young children, older adults, or anyone immunocompromised, cook the pork to 70°C (160°F) and rest as directed.
Substitutions
- Replace sunflower oil with olive oil for a fruitier finish.
- Replace mustard with dijon-mustard for a smoother, sharper flavour.
- Replace chicken stock with vegetable stock for a lighter gravy.
Storage
- Refrigerate up to 3 days
- Cool the sliced pork and gravy, then refrigerate in separate airtight containers. Reheat the pork in a 180°C (355°F) oven, covered, until piping hot; warm the gravy gently in a saucepan, adding a splash of water if it has thickened. Freeze for up to 2 months and defrost overnight in the fridge before reheating.
