Chapon Rôti (French Roast Capon with Thyme Butter)
Why this recipe works
- Classic roasting method: Starting hot at 200°C (390°F) helps the skin take on colour before the gentler roast at 170°C (340°F) cooks the bird through evenly.
- Seasoned from within: Thyme-garlic butter under the skin flavours the breast meat directly, while the cavity aromatics perfume the roast from the inside.
- Built-in pan gravy: White wine and stock lift the browned roasting juices into a glossy, savoury gravy without needing a separate sauce base.

Timing notes
- Rest before carving: A 20-minute rest lets the juices settle, making the capon easier to carve and keeping the meat moist.
- Serve once carved: Carve just before serving so the slices stay warm and the skin retains as much crispness as possible.
Common mistakes
- Avoid over-roasting: Use a thermometer and stop cooking when the thickest part of the thigh reaches 74°C (165°F); capon can dry out if taken too far.
- Watch the browning: If the breast colours too quickly, cover it loosely with foil rather than lowering the oven further.
- Store gravy and meat well: For best leftovers, chill carved meat and gravy separately, then reheat the meat gently with a little stock.
Authenticity notes
- French home-style centrepiece: Chapon rôti is typically treated as a generous roast bird, served carved at the table with its own pan juices or a simple gravy.
- Traditional accompaniments: Roast potatoes, green beans, chestnuts or simple seasonal vegetables all suit the rich meat and wine-based gravy.
Ingredient swaps
- Change the herb character: Fresh rosemary can replace thyme for a more resinous, piney flavour that still works well with roast poultry.
- Make the gravy without wine: Use extra chicken stock instead of dry white wine, scraping the pan well to capture the browned roasting juices.

Ingredients
Instructions
- Heat the oven to 200°C (390°F). Pat the capon dry, then season it all over and inside the cavity with the fine sea salt and black pepper.
- In a bowl, mash the butter with 4 of the garlic cloves and the leaves from 4 thyme sprigs. Carefully loosen the skin over the breast with your fingers and push most of the thyme butter underneath; rub the rest over the skin.
- Put the remaining 2 garlic cloves and 2 thyme sprigs in the cavity, then place the bird breast-side up in a roasting pan. Roast for 20 minutes to start browning the skin.
- Reduce the oven to 170°C (340°F) and continue roasting for 60 to 75 minutes, basting once or twice with the pan juices. The capon is ready when the thickest part of the thigh reaches 74°C (165°F) and the juices run clear.
- Transfer the capon to a warm board and rest for 20 minutes before carving. Spoon off excess fat from the roasting pan, leaving the browned bits and juices behind.
- Set the roasting pan over a medium heat and pour in the dry white wine, scraping up the browned bits with a wooden spoon. Add the chicken stock and simmer for 8 to 10 minutes until lightly reduced and glossy; taste and adjust seasoning if needed.
- Carve the capon and serve with the warm white wine gravy spooned over. Any resting juices on the board can be stirred into the gravy just before serving.
Recipe notes
Tips
- For the crispest skin, make sure the capon is thoroughly dry before seasoning and buttering.
- If the skin is browning too quickly, loosely cover the breast with foil for the final part of roasting.
- If you are serving vulnerable people, ensure the capon is cooked to at least 74°C (165°F) in the thickest part of the thigh.
Substitutions
- Replace Fresh thyme with fresh rosemary for a more resinous, piney flavour.
- Replace Dry White Wine with a little extra Chicken stock for an alcohol-free gravy.
Storage
- Refrigerate up to 3 days
- Cool leftovers quickly, then refrigerate in a sealed container. Reheat carved meat with a splash of chicken stock in a 180°C (355°F) oven until piping hot; freeze carved meat and gravy separately for best texture.
