Poulet Rôti à la Moutarde de Dijon (Roast Chicken with Dijon Mustard)
Why this recipe works
- Layered savoury flavour: Dijon mustard, butter, thyme, garlic and lemon season the chicken from the outside in, while the pan sauce captures the browned roasting juices.
- Crisp, browned skin: Starting the chicken in a hot oven helps the mustard butter brown quickly before the temperature is reduced for gentler roasting.
- Balanced richness: White wine and roasted lemon cut through the butter and chicken fat, giving the sauce a bright, clean finish.

Ingredient notes
- Use proper Dijon mustard: Dijon gives the coating its sharp, smooth character; a sweet or mild mustard will make the sauce taste less defined.
- Fresh herbs work best: Fresh thyme holds up well during roasting and gives the butter a cleaner, more aromatic flavour than dried herbs.
- Adjust the sauce at the table: A squeeze of the roasted lemon can sharpen the finished pan sauce if it tastes too rich.
Timing notes
- Rest before carving: Resting the chicken for 10 minutes helps the juices settle, so the breast and thigh meat stay moist when carved.
- Serve while the sauce is warm: Make the pan sauce while the chicken rests, then carve and serve straight away for the best texture and gloss.
Common mistakes
- Do not rely on colour alone: Deep browning is expected with mustard butter, but the chicken is done when the thickest part of the thigh reaches 75°C (165°F).
- Watch the breast skin: If the top browns too quickly, loosely cover the breast area with foil towards the end of roasting.
- Reduce the sauce gently: Simmer the wine and stock only until slightly glossy; reducing too far can make the mustardy pan sauce overly salty and sharp.
Serving ideas
- Serve with potatoes: Roast potatoes, mash or boiled new potatoes are natural partners for the mustard and wine pan sauce.
- Add something green: Green beans, wilted spinach or a crisp salad bring freshness alongside the rich roast chicken.
- Pair with dry white wine: A dry white wine with good acidity suits the Dijon and lemon notes without overwhelming the chicken.

Ingredients
Instructions
- Heat the oven to 220°C (430°F). Pat the chicken dry, then season all over with the salt and pepper.
- In a bowl, mash together the butter and Dijon mustard. Strip the leaves from 4 thyme sprigs and stir them into the mustard butter.
- Rub the mustard butter all over the chicken, including under the skin over the breast where you can. Crush the garlic cloves lightly and halve the lemon, then put them in the cavity with the remaining thyme sprigs.
- Set the chicken in a roasting pan and roast for 15 minutes to start browning. Reduce the oven to 190°C (375°F) and continue roasting for 45 to 55 minutes, basting once or twice, until the skin is deeply browned and the thickest part of the thigh reaches 75°C (165°F).
- Transfer the chicken to a board and rest for 10 minutes. Spoon off excess fat from the roasting pan, leaving the browned bits and juices behind.
- Place the roasting pan over a medium heat, pour in the white wine and scrape up the browned bits. Add the chicken stock and simmer for 5 to 8 minutes until slightly reduced and glossy, then taste and adjust with a pinch more salt and pepper if needed.
- Carve the chicken and serve with the warm pan sauce spooned over. Squeeze a little of the roasted lemon into the sauce at the table if you like it sharper.
Recipe notes
Tips
- For the crispest skin, make sure the chicken is thoroughly dry before you rub on the mustard butter.
- If the skin is browning too quickly, loosely cover the breast area with foil for the last 15 to 20 minutes of roasting.
- Food safety: ensure the chicken is cooked to 75°C (165°F) at the thickest part of the thigh, and rest it before carving.
Substitutions
- Replace Fresh thyme with Fresh rosemary for a more resinous, woodsy flavour.
- Replace Dry White Wine with Chicken stock for an alcohol-free sauce.
Storage
- Refrigerate up to 3 days
- Cool leftovers quickly, then refrigerate in a sealed container. Freeze carved chicken with a little sauce for up to 2 months; defrost overnight in the fridge and reheat in a 180°C (355°F) oven, covered, until piping hot.
