Tarka Dal with Basmati Rice

In tarka dal, soft red lentils provide a creamy, gently spiced base for a final flourish of hot seasoned fat. The defining element is the tarka: ghee infused with mustard seeds, dried chilli, garlic and ginger, then stirred through the dal so the fragrance blooms just before serving. Paired with basmati rice, it makes a complete vegetarian dinner with soothing texture, savoury depth and moderate warmth rather than heavy heat. A squeeze of lemon at the table lifts the richness and keeps the dish fresh, making it well suited to quick weeknight cooking as well as a simple, comforting meal to share.

Why this recipe works

  • Aromatic tempering: Blooming mustard seeds, chilli, garlic and ginger in hot ghee creates a fragrant tarka that carries flavour through the lentils.
  • Naturally creamy lentils: Red lentils break down quickly as they simmer, giving the dal a soft, spoonable texture without needing cream.
  • Bright finish: Lemon added at the table cuts through the richness of the ghee and keeps the dal lively.

Adjust the heat

  • For a gentler dal: Leave the dried chilli whole and remove it before serving so it perfumes the ghee without adding much heat.
  • For more heat: Lightly crush the dried chilli before adding it to the ghee, or add extra chilli to the tempering if you prefer a sharper finish.

Common mistakes

  • Do not brown the garlic: Garlic and ginger cook very quickly in hot ghee; keep the heat moderate and remove the pan from the heat if they start to darken.
  • Adjust the dal before serving: Red lentils thicken as they sit, so loosen the dal with a splash of water and warm it through until it is soft and spoonable.

Ingredient notes

  • Use ghee for depth: Ghee gives the tarka its rounded, nutty richness and handles the heat well when blooming whole spices.
  • Add lemon at the end: Squeezing lemon over each portion keeps the flavour fresh and lets everyone adjust the brightness to taste.

Make-ahead tips

  • Good for batch cooking: The dal keeps well in the fridge and can also be frozen; reheat gently with a little water to restore its creamy consistency.
  • Keep rice separate: Store the dal and rice in separate containers so the rice stays lighter and the dal can be loosened properly when reheated.

  1. Rinse the basmati rice in cold water until the water runs mostly clear. Tip into a saucepan, cover with fresh water, bring to the boil, then reduce to a low simmer and cook for 10 to 12 minutes until tender. Drain well, cover, and leave to steam while you finish the dal.
  2. Rinse the red lentils, then put them in a large pot with the ground turmeric and ground cumin. Cover with water, bring to the boil, then simmer for 10 to 12 minutes, stirring now and then, until the lentils are soft and creamy. If it looks too thick, add a splash more water and simmer briefly to loosen.
  3. While the lentils simmer, peel and finely grate the ginger, and finely slice the garlic. Cut the lemon into wedges. Keep everything close to the hob as the tarka comes together quickly.
  4. Heat the ghee in a small saucepan over medium heat until shimmering. Add the mustard seeds and dried red chili and cook for 30 to 60 seconds until the seeds start to pop and the chilli darkens slightly. Stir in the garlic and ginger and cook for 30 to 60 seconds until fragrant, taking care not to let the garlic brown.
  5. Pour the hot tarka over the dal and stir well, scraping in all the spiced ghee. Taste and adjust the consistency with a splash of water if needed, then warm through for 1 minute. Serve the dal with the basmati rice and a squeeze of lemon over each portion.

Recipe notes

Tips

  • For extra fragrance, lightly crush the dried red chili before adding it to the ghee so it releases more heat into the tempering.
  • Keep the heat moderate when adding the garlic and ginger to the ghee; if the garlic browns, the tarka can taste bitter.
  • If serving anyone vulnerable, use pasteurised ghee and ensure the dal is simmered until piping hot throughout.

Substitutions

  • Replace ghee with butter for a similar richness, but keep the heat slightly lower as butter can brown faster.
  • Replace mustard seeds with cumin seeds for a different, more earthy tempering.
  • Replace lemon with lime for a sharper, more aromatic finish.

Storage

  • Refrigerate up to 3 days
  • Cool the dal quickly, then refrigerate in a sealed container for up to 3 days. Freeze the dal for up to 2 months; defrost overnight in the fridge and reheat gently in a saucepan with a splash of water until piping hot. Rice is best cooked fresh, but leftovers can be chilled and reheated until piping hot.
