Masoor Dal Tadka (Red Lentil Curry)
Why this recipe works
- Layered spice: Simmering the lentils separately keeps the base mellow, while the hot tadka adds toasted spice, garlic and chilli right at the end.
- Naturally creamy: Red lentils soften quickly and break down as they cook, giving the dal body without needing cream.
- Fresh finish: Tomato and lemon lift the richness of the ghee and keep the final dal bright rather than heavy.

Adjust the heat
- Make it milder: Leave the dried chilli whole and remove it before serving, or omit it entirely for a gentler dal.
- Add more heat: Break the dried chilli into the tadka so it releases more warmth into the ghee.
- Keep the heat rounded: Finish with lemon to sharpen the flavours and stop the chilli and ghee from feeling too heavy.
Texture tips
- For a smoother dal: Whisk or mash the lentils once tender so they break down into a more cohesive, creamy texture.
- Loosen as needed: Red lentils thicken as they stand, so add a splash of water while reheating or before serving if the dal becomes too dense.
- Cook until fully soft: Stop simmering only when the lentils are tender and beginning to collapse; undercooked lentils can leave the dal gritty.
Ingredient notes
- Use red lentils: Red lentils are ideal here because they cook quickly and naturally break down into a soft dal.
- Ghee adds depth: Ghee gives the tadka a nutty richness, but olive oil works if you need a dairy-free version.
- Adjust the finish: Add lemon to taste at the end, once the dal is cooked, so the acidity stays fresh and clear.
Make-ahead tips
- Good for meal prep: The dal keeps well in the fridge and the flavour settles nicely after resting.
- Reheat gently: Warm in a saucepan with a splash of water, stirring until piping hot throughout.
- Freezer-friendly: Freeze cooled dal in a sealed container, then defrost overnight in the fridge before reheating.

Ingredients
Instructions
- Finely chop the onion. Peel and grate the ginger, then thinly slice the garlic. Chop the tomatoes, and roughly chop the coriander.
- Rinse the lentils in a sieve until the water runs mostly clear. Tip into a saucepan with the water, tomatoes, turmeric and 1 tsp of the salt. Bring to the boil, then reduce to a gentle simmer.
- Simmer for 18 to 22 minutes, stirring occasionally, until the lentils are soft and starting to break down. If it looks too thick, add a splash more water; if too thin, simmer uncovered for a few minutes. Taste and adjust with a little more salt if needed.
- While the lentils simmer, make the tadka: melt the ghee in a frying pan over medium heat. Add the mustard seeds and dried red chili and cook for 30 to 60 seconds until the seeds start to pop. Stir in the onion and cook for 6 to 8 minutes until softened and lightly golden.
- Add the garlic, ginger and ground cumin to the pan and cook for 45 to 60 seconds until fragrant. Pour the sizzling tadka over the lentils and stir through. Squeeze in lemon juice to taste, then scatter over the coriander to serve.

Serving suggestions
This recipe pairs well with:
Tips
- For a smoother dal, whisk it vigorously for 20 to 30 seconds once the lentils are tender, or mash lightly with the back of a spoon.
- Keep the heat moderate for the tadka so the garlic turns pale golden, not brown, which can make it bitter.
- If serving vulnerable groups, ensure the dal is simmered until piping hot throughout before serving.
Substitutions
- Replace ghee with olive oil for a dairy-free finish.
- Replace dried red chili with 0.5 tsp ground cumin for a milder tadka.
- Replace lemon with 1 tbsp apple-cider-vinegar for a sharper tang.
Storage
- Refrigerate up to 3 days
- Cool completely, then refrigerate in a sealed container for up to 3 days. Reheat gently in a saucepan with a splash of water, stirring, until piping hot. Freeze for up to 3 months; defrost overnight in the fridge before reheating.
