Bread Pudding with Bourbon Sauce
Why this recipe works
- Soft custard centre: Brioche absorbs the egg and milk custard, giving the pudding a tender, creamy middle rather than a dry crumb.
- Sweetness with depth: Caster sugar keeps the custard clean and light, while brown sugar in the sauce adds caramel warmth.
- Warm, familiar flavours: Vanilla, cinnamon, butter and bourbon create a cosy dessert with a lightly spiced, caramelised finish.

Timing notes
- Let the bread soak: The short standing time before baking helps the brioche absorb the custard evenly, reducing dry patches.
- Serve warm: Bread pudding is at its best after a brief rest, while the centre is softly set and the sauce is still warm.
Ingredient notes
- Choose slightly stale brioche: Day-old brioche soaks up the custard more evenly and is less likely to collapse into a mushy texture.
- Use a bourbon you like: The bourbon is added directly to the sauce, so its flavour comes through clearly alongside the butter and brown sugar.
Common mistakes
- Do not pull it too early: The centre should have only a slight wobble; if it looks loose or wet, give it more time in the oven.
- Watch the top: If the surface browns before the custard is set, move the dish to a lower oven shelf for the final stage of baking.
- Keep the sauce gentle: Once the bourbon is added, warm the sauce over low heat rather than boiling it hard, which can make it look greasy.
Make-ahead tips
- Reheat gently: Warm portions in a 180°C (355°F) oven until piping hot, then spoon over reheated sauce just before serving.
- Freeze without the sauce: The baked pudding can be frozen well wrapped, but the bourbon sauce is best made fresh or stored separately.

Instructions
- Heat the oven to 180°C (355°F). Grease a baking dish with the 20 g unsalted butter.
- Cut the brioche into bite-sized cubes and add to the baking dish. Spread it out in an even layer.
- In a mixing bowl, whisk together the 600 ml whole milk, eggs, caster sugar, 2 tsp vanilla extract and ground cinnamon until smooth. Pour the custard over the brioche, pressing the bread down so it soaks evenly.
- Leave the pudding to stand for 15 minutes so the brioche fully absorbs the custard. Give it a gentle press once or twice during soaking to help any dry pieces.
- Bake for 35 to 40 minutes until puffed, golden and softly set, with just a slight wobble in the centre. If the top browns too quickly, move the dish to a lower shelf for the final 10 minutes.
- While the pudding bakes, make the sauce: melt the 80 g unsalted butter in a saucepan over medium heat. Stir in the light brown sugar and whole milk, then simmer for 3 to 5 minutes until glossy and slightly thickened.
- Take the pan off the heat and stir in the bourbon and 1 tsp vanilla extract. Return to a low heat for 30 to 60 seconds to warm through, without boiling hard.
- Rest the bread pudding for 5 minutes before serving. Spoon warm bourbon sauce over each portion.
Recipe notes
Tips
- For the best texture, use slightly stale brioche so it soaks up the custard without turning mushy.
- If you prefer a thicker sauce, simmer it a little longer before adding the bourbon, then keep the heat low once the bourbon goes in.
- Food safety: this dessert contains eggs; serve it fully baked and avoid serving to anyone who should not eat undercooked egg.
Substitutions
- Replace brioche bread with crusty white bread for a less rich, more traditional pudding.
- Replace bourbon with aged rum for a similar warm, caramel flavour in the sauce.
- Replace light brown sugar with dark brown sugar for a deeper molasses note.
Storage
- Refrigerate up to 3 days
- Cool completely, then cover and refrigerate. Reheat portions in a 180°C (355°F) oven for 10 to 15 minutes until piping hot; warm the sauce gently in a saucepan over low heat. Freeze the pudding (without sauce) well wrapped for up to 2 months, then thaw overnight in the fridge before reheating.
