Gajar ka Halwa (Carrot Halwa with Milk and Ghee)
Why this recipe works
- Creamy reduced milk base: Slow simmering allows the carrots to soften while the milk thickens around them, giving the halwa its characteristic rich, spoonable texture.
- Layered sweetness and spice: Carrots, sugar, sultanas and cardamom create a warm, sweet dessert without relying on heavy flavourings.
- Nutty finish: Toasted almonds and pistachios add fragrance and crunch against the soft carrot and milk mixture.

Timing notes
- Most of the time is reduction: The active preparation is mainly grating and stirring; the key cooking time is the slow reduction of milk with the carrots.
- Serve warm or at room temperature: The halwa is at its softest when warm, but it also keeps its flavour well once cooled to room temperature.
Texture tips
- For a smoother halwa: Grate the carrots more finely and cook until completely tender before adding the sugar.
- For more texture: Use a coarse grate and let the carrots remain distinct while still cooking them until soft.
- Reduce gently: Keep the milk at a steady simmer rather than a hard boil so the mixture thickens evenly without catching.
Ingredient notes
- Choose sweet, firm carrots: Good carrots make a noticeable difference here, as their natural sweetness and colour are central to the dessert.
- Use cardamom carefully: Crushed green cardamom pods give a classic aroma; remove the pods before serving if whole spices may be unwelcome.
- Toast the nuts: A brief toast brings out the flavour of the almonds and pistachios and keeps the garnish crisp.
Make-ahead tips
- Make ahead: Cook the halwa in advance, cool it completely, then store it sealed in the fridge.
- Reheat gently: Warm over low heat with a little milk, stirring until hot and soft again.
- Freeze in portions: Freeze cooled portions, then defrost overnight in the fridge before reheating.

Ingredients
Instructions
- Peel the carrots, then grate them on the coarse side of a grater. Lightly crush the green cardamom pods to crack them open.
- Put the grated carrots and whole milk into a large frying pan over medium heat and bring to a gentle simmer. Cook, stirring often, for 35 to 45 minutes until the carrots are tender and most of the milk has reduced and thickened.
- Add the ghee and cook for 8 to 10 minutes, stirring, until the mixture looks glossy and starts to come together from the sides of the pan. Stir in the sultanas and cook for 2 minutes so they plump up.
- Add the granulated sugar and cook for 8 to 10 minutes, stirring, until the halwa thickens again and no longer looks watery. Stir in the crushed cardamom pods, then cook for 1 minute more.
- In a small dry pan over medium heat, toast the slivered almonds and pistachios for 2 to 3 minutes until fragrant, watching closely. Spoon the halwa into bowls and scatter over the toasted nuts; serve warm or at room temperature.
Recipe notes
Tips
- Keep the heat at a gentle simmer and stir regularly, especially towards the end, to prevent the milk catching on the base of the pan.
- For a smoother finish, grate the carrots finely; for more texture, use a coarser grate and cook until fully tender.
- If serving to young children or anyone who may be sensitive to whole spices, remove the cardamom pods before serving.
Substitutions
- Replace Whole milk with Evaporated milk for a richer, faster-reducing halwa; use the same amount.
- Replace Granulated sugar with Light brown sugar for a deeper, caramel note.
- Replace Sultana with Golden raisin for a slightly fruitier sweetness.
Storage
- Refrigerate up to 4 days
- Cool completely, then refrigerate in a sealed container. Reheat gently in a saucepan over low heat with a splash of whole milk, stirring until piping hot; or microwave in short bursts, stirring between. Freeze in portions for up to 2 months and defrost overnight in the fridge before reheating.
