Shahi Tukda (Mughal Bread Pudding)
Why this recipe works
- Syrupy, creamy contrast: Fried bread absorbs the warm syrup while the thickened milk stays rich and pourable, giving the dessert its signature layered texture.
- Fragrant sweetness: Cardamom and saffron infuse the reduced milk, adding depth and aroma without overwhelming the sweetness.
- Works warm or chilled: A short chill helps the syrup and milk settle into the bread, making the dessert easy to prepare before serving.

Timing notes
- Serve warm or chilled: Serve soon after assembling for a softer, warm pudding, or chill briefly for a firmer set and more settled flavour.
- Milk reduction needs attention: Most of the cooking time is spent reducing the milk; stir often, especially near the end, to prevent it catching on the base of the pan.
Texture tips
- Keep the bread in a single layer: Arrange the fried bread flat before adding syrup so each piece absorbs evenly without collapsing too quickly.
- Reduce the milk gently: A gentle simmer gives the milk time to thicken and take on the saffron and cardamom flavour while keeping the texture smooth.
Ingredient notes
- Use day-old bread if possible: Slightly dry bread fries more cleanly and holds its shape better once soaked with syrup.
- Ghee gives the classic richness: Ghee adds a nutty depth and higher-heat frying quality that suits the bread; butter can work, but browns more quickly.
- Cardamom and saffron define the aroma: Lightly crushing the cardamom helps release its fragrance, while saffron gives the milk its warm colour and floral note.
Make-ahead tips
- Chill for a firmer dessert: After assembling, refrigerate briefly if you prefer the bread to set more firmly under the milk topping.
- Warm gently if reheating: Reheat in short bursts until just warm; overheating can cause the milk topping to split.

Instructions
- Pour the milk into a saucepan and bring to a gentle simmer over medium heat. Lightly crush the cardamom pods and add them with the saffron. Simmer, stirring often, for 25 to 30 minutes until reduced and thick enough to lightly coat the back of a spoon.
- While the milk reduces, make the syrup: put 200 g of the caster sugar in a saucepan with 200 ml water and bring to a simmer. Cook for 6 to 8 minutes until slightly thickened and glossy, then take off the heat. Keep warm.
- Stir the remaining 20 g caster sugar into the thickened milk, then strain out the cardamom pods if you prefer a smoother finish. Keep the milk warm on a very low heat, stirring occasionally so it does not catch. It should be thick but still pourable.
- Trim the crusts from the bread and cut each slice diagonally into 2 triangles. Heat the ghee in a large frying pan over medium heat. Fry the bread in batches for 1 to 2 minutes per side until deep golden, adding a little more ghee to the pan as needed.
- Arrange the fried bread in a single layer in a shallow dish. Spoon the warm syrup over the bread and leave for 5 minutes so it soaks in. Turn the pieces once if needed so they absorb evenly.
- Spoon the warm saffron milk over the soaked bread. Finely chop the almonds and pistachios, then scatter over the top. Serve slightly warm, or chill for 20 minutes for a firmer set.

Tips
- Keep the milk at a gentle simmer rather than a rolling boil, and stir frequently, especially towards the end, to prevent scorching.
- For a cleaner look, strain the thickened milk to remove the cardamom pods before sweetening and pouring over the bread.
- If serving chilled, cover and refrigerate for at least 20 minutes so the syrup and milk settle into the bread.
Substitutions
- Replace White bread with Brioche bread for a richer, softer result.
- Replace Caster sugar with Demerara sugar for a deeper caramel note in the syrup.
- Replace Ghee with Unsalted butter if needed, but keep the heat slightly lower as butter browns faster.
Storage
- Refrigerate up to 2 days
- Refrigerate in a covered container. Serve chilled, or reheat gently in a microwave in short bursts until just warm; avoid overheating so the milk topping does not split.
