Kulfi (Indian Ice Cream with Saffron, Cardamom and Pistachios)

Dense, fragrant and served straight from moulds, kulfi is India’s classic reduced-milk frozen dessert: creamier and more compact than churned ice cream, with a gentle chew from concentrated milk solids. This version keeps the flavour traditional and focused, simmering whole milk slowly until thick before infusing it with saffron and cracked green cardamom. Pistachios add a clean nutty finish and a little texture against the smooth, sweet base. It is well suited to making ahead, whether served simply after a meal or unmoulded for a more polished dessert.

Why this recipe works

  • Slow reduction: Reducing the milk concentrates its natural sweetness and creates kulfi’s dense, creamy body without churning.
  • Aromatic flavour: Cardamom infuses the milk early, while saffron is added near the end so its floral warmth remains clear.
  • Ideal for preparing ahead: The kulfi needs time to freeze fully, making it well suited to preparing the day before serving.

Authenticity notes

  • Reduced milk base: Kulfi is traditionally known for its thick, unchurned texture, achieved here by simmering milk until the solids become concentrated.
  • Classic flavourings: Saffron, green cardamom and pistachios are widely recognised kulfi flavours, giving the dessert its fragrant, nutty character.

Timing notes

  • Cool before freezing: Let the reduced milk cool to room temperature before adding it to moulds so it freezes more evenly.
  • Best frozen overnight: A longer freeze gives the kulfi a firmer set and makes it easier to unmould cleanly.
  • Soften briefly before serving: A few minutes at room temperature helps the kulfi release from the mould and improves the eating texture.

Ingredient notes

  • Use whole milk: Whole milk gives the kulfi the richest texture; lower-fat milk will make a lighter, less dense dessert.
  • Choose fresh cardamom: Cracking whole green cardamom pods just before simmering gives a cleaner, more aromatic flavour than stale ground spice.
  • Nut substitutions: Almonds work well in place of pistachios, but avoid salted nuts as they can throw off the dessert’s delicate sweetness.

Common mistakes

  • Letting the milk catch: Keep the simmer gentle and scrape the base and sides regularly; reduced milk can scorch quickly once it thickens.
  • Stopping too early: The milk should look thick and creamy before freezing. If it is still thin, the finished kulfi will taste icy rather than dense.
  • Unmoulding too soon: Kulfi needs to be fully firm before serving, otherwise it can collapse or break as it comes out of the mould.

  1. Pour the milk into a wide saucepan and bring to a gentle simmer over medium heat, stirring often so it does not catch. Lightly crush the cardamom pods to crack them open, then add them to the pan.
  2. Simmer gently, stirring and scraping the base and sides regularly, until the milk reduces to about one third and looks thick and creamy. You are aiming for a rich, slightly grainy texture from the reduced milk solids.
  3. Stir in the saffron and caster sugar, then simmer for 5 minutes, stirring until the sugar fully dissolves. Take off the heat and let it stand for 10 minutes so the cardamom and saffron infuse.
  4. Strain the mixture to remove the cardamom pods, then cool to room temperature, stirring occasionally to prevent a skin forming. Once cool, stir in most of the pistachios, reserving a little for serving.
  5. Divide the mixture between moulds and freeze until firm. For the best texture, freeze for at least 3 hours, or overnight if you can.

Recipe notes

Tips

  • Use a wide saucepan and keep the heat gentle; frequent stirring and scraping is what gives kulfi its signature dense, reduced-milk richness without scorching.
  • If serving from moulds, dip the outside briefly in warm water, then turn out onto plates and scatter over the reserved pistachios.

Substitutions

  • Replace pistachios with almonds for a different nutty finish.
  • Replace caster sugar with granulated sugar; allow an extra minute or two of stirring for it to dissolve fully.

Storage

  • Keep kulfi covered in the freezer for up to 2 weeks to prevent it picking up freezer odours. Let it sit at room temperature for 3 to 5 minutes before serving so it scoops or unmoulds cleanly.
