Flan de Naranja (Orange Caramel Flan)
Why this recipe works
- Gentle water-bath baking: Baking the ramekins in hot water helps the custard set evenly without curdling or becoming rubbery.
- Citrus balances the caramel: Fresh orange juice and zest cut through the sweetness of the custard and bring brightness to the caramel sauce.
- Silky custard texture: Gently whisking the eggs and warming the milk before combining helps create a smooth, delicate set.

Timing notes
- Chill until fully set: The flans need at least 2 hours in the fridge after cooling, but a longer chill gives a cleaner unmoulded shape.
- Turn out just before serving: Invert the flans at the last moment so the caramel flows neatly over the custard.
Common mistakes
- Watch the caramel closely: Caramel can move from deep amber to burnt quickly, so take it off the heat as soon as it reaches the right colour.
- Do not bake until firm: The centres should still have a slight wobble; they will continue to set as they cool.
- Avoid whisking in too much air: A frothy custard mixture can bake with bubbles and a pitted surface rather than a smooth finish.
Ingredient notes
- Use unwaxed oranges if possible: Because the zest is used, unwaxed oranges give the cleanest citrus flavour without needing heavy scrubbing.
- Whole milk gives the right balance: Whole milk keeps the custard creamy without making it overly rich; a milk-and-cream mix will give a denser result.
Make-ahead tips
- Make ahead in ramekins: The flans can be kept covered in the fridge for up to 3 days before unmoulding.
- Best after unmoulding: Once turned out, serve straight away for the neatest shape and the best caramel flow.

Ingredients
Instructions
- Heat the oven to 160°C (320°F). Put 4 ramekins in a deep baking dish and set a kettle of water to boil.
- Make the caramel: put 120 g of the caster sugar in a small saucepan with 2 tbsp water and cook over medium heat until it turns a deep amber. Immediately divide the caramel between the ramekins, tilting to coat the bases.
- Finely zest the oranges into a mixing bowl, then squeeze the juice. You want about 120 ml juice; if you get a little more or less, that is fine.
- Whisk the eggs with the remaining 40 g caster sugar and the fine sea salt just until combined, without making it too frothy. Whisk in the orange juice and vanilla extract.
- Warm the whole milk in a saucepan until steaming but not boiling. Slowly whisk the warm milk into the egg mixture, then let the mixture stand for 2 minutes so any bubbles rise.
- Pour the custard into the caramel-lined ramekins. Carefully pour hot water into the baking dish to come halfway up the sides of the ramekins, then bake for 35 to 45 minutes until the centres are just set with a slight wobble.
- Lift the ramekins out of the water bath and cool to room temperature. Chill for at least 2 hours, or until fully cold and set.
- To serve, run a thin knife around each flan and invert onto plates. Let the caramel run over the top, then serve straight away.
Recipe notes
Tips
- For the smoothest custard, whisk gently and avoid incorporating lots of air, which can cause bubbles and a pitted surface.
- If the caramel starts to crystallise, keep cooking gently without stirring; it will usually melt back into a smooth caramel as it heats.
- Eggs in this recipe are baked, but if you are pregnant, elderly, or immunocompromised, use eggs stamped with the British Lion mark for extra reassurance.
Substitutions
- Replace Vanilla extract with vanilla bean paste for a more pronounced vanilla flavour.
- Replace Whole milk with milk-and-cream for a richer, more luxurious custard.
Storage
- Refrigerate up to 3 days
- Keep the flans covered in the fridge in their ramekins. Turn out just before serving for the neatest finish and best caramel flow.
