Eid Chicken Pilaf (Turkish Rice Cooked in Stock with Browned Thighs)

Turkish chicken pilaf brings together tender bone-in thighs and fluffy rice in a single, deeply savoury pot. The dish centres on rice cooked in hot chicken stock, with the browned chicken returned to the pan so its juices season the grains as they steam. Onion, cumin and sweet paprika give gentle warmth rather than heavy spice, while butter stirred through at the end softens the texture and rounds out the flavour. It is the kind of generous rice dish suited to Eid tables, family dinners or any meal where a substantial, aromatic main is needed with minimal extras.

Why this recipe works

  • Built-in savoury depth: Browning the chicken first creates flavour in the pot, which is then lifted into the rice with the hot stock.
  • One-pot efficiency: The chicken and rice cook together, so the grains absorb stock, spices and resting juices as they simmer.
  • Rich but balanced: Butter rounds out the finished rice, while cumin and sweet paprika add warmth without making the dish hot.

Timing notes

  • Rest before fluffing: The covered rest after cooking lets the rice finish steaming and helps the butter melt evenly through the grains.
  • Serve while freshly steamed: The pilaf is best served soon after resting, when the rice is fluffy and the chicken skin is still at its best.

Common mistakes

  • Do not crowd the chicken: Brown the thighs in batches if needed; crowding traps steam and prevents a deep golden surface.
  • Keep the simmer gentle: Once covered, low heat helps the rice cook evenly without catching on the base of the pot.
  • Avoid fluffing too soon: Opening and stirring immediately after cooking can make the rice heavy; let it rest covered first.

Ingredient notes

  • Rinse the rice well: Rinsing basmati until the water runs mostly clear removes excess surface starch and supports a lighter pilaf texture.
  • Use sweet paprika for warmth: Sweet paprika keeps the flavour rounded and gentle; smoked paprika can be used when a deeper, smokier note is wanted.
  • Use hot stock: Adding the stock hot helps the pot return to a simmer quickly, supporting more even rice cooking.

Make-ahead tips

  • Good for portions: Cool leftovers quickly, then refrigerate in sealed containers for easy meals over the next few days.
  • Reheat gently: Add a splash of stock and reheat covered over low heat, or warm in a 180°C (355°F) oven until piping hot.
  • Freezes well: Freeze in portions and defrost overnight in the fridge before reheating thoroughly.

  1. Rinse the rice in cold water until the water runs mostly clear, then drain well. Pat the chicken thighs dry and season all over with 1 tsp of the fine sea salt and half the black pepper.
  2. Heat the sunflower oil in a Dutch oven over medium-high heat. Brown the chicken thighs skin-side down until deeply golden, then turn and brown the other side; do this in batches if needed so the pan is not crowded. Transfer the chicken to a plate.
  3. Reduce the heat to medium and add the onion to the same pot. Cook, stirring, until softened and lightly golden. Stir in the ground cumin and sweet paprika and cook for 30 seconds until fragrant.
  4. Add the drained rice and stir for 1 minute so the grains are well coated in the spiced oil. Pour in the hot chicken stock and scrape the bottom of the pot to release any browned bits. Stir in the remaining fine sea salt and remaining black pepper.
  5. Nestle the chicken thighs back into the pot, skin-side up, along with any resting juices. Bring to a gentle simmer, then cover and cook on low heat for 18 to 20 minutes, until the rice is tender and the chicken is cooked through. If the rice is tender but there is still liquid, cook uncovered for 2 to 3 minutes to evaporate it.
  6. Turn off the heat and dot the butter over the rice. Cover again and leave to rest for 10 minutes so the butter melts and the rice finishes steaming. Fluff the rice gently with a spoon and serve with the chicken on top.

Recipe notes

Tips

  • Keep the heat low once covered; a gentle simmer helps the rice cook evenly without catching on the bottom.
  • For extra fragrance, toast the rice briefly in the spiced onion mixture before adding the stock, but do not let the spices darken.
  • Food safety: make sure the chicken is piping hot all the way through before serving.

Substitutions

  • Replace sunflower oil with olive oil for a slightly fruitier base.
  • Replace sweet paprika with smoked paprika for a deeper, smoky flavour.

Storage

  • Refrigerate up to 3 days
  • Cool quickly, then refrigerate in a sealed container. Reheat with a splash of chicken stock in a covered saucepan over low heat, or in a 180°C (355°F) oven until piping hot. Freeze in portions for up to 2 months and defrost overnight in the fridge before reheating.
