Xoi Ga (Vietnamese Sticky Rice with Chicken)

In Vietnamese cooking, xôi gà brings together glossy glutinous rice, tender shredded chicken and the savoury crunch of fried shallots or onion. The rice is soaked and steamed rather than boiled, giving it a pleasantly chewy texture that holds its shape, while a little chicken fat adds richness without making the dish heavy. Gently poached chicken seasoned with fish sauce, ginger, spring onion and white pepper keeps the flavour clean, aromatic and deeply savoury. Served warm in bowls, it works as a satisfying rice dish for dinner, with plenty of scope to adjust the seasoning at the table.

Why this recipe works

  • Proper sticky rice texture: Soaking the glutinous rice before steaming helps it cook evenly into tender, glossy grains without turning mushy.
  • Savoury depth: Poaching the chicken with ginger and spring onion gives the meat a clean aromatic base before fish sauce and white pepper add seasoning.
  • Balanced textures: Chewy sticky rice, fine shreds of chicken and crisp fried onion create the dish’s distinctive contrast.
  • Good for preparing ahead: The rice and chicken can be stored separately, then reheated and assembled just before serving so the topping stays fresh.

Timing notes

  • Plan for soaking: The rice needs a long soak, ideally overnight, so it steams evenly and develops the right chewy texture.
  • Best served warm: Assemble the bowls while the rice is hot, before adding the chicken and fried onion.

Texture tips

  • Drain the rice well: After soaking, let the rice drain thoroughly before steaming; excess water can make the grains wet rather than springy.
  • Keep the poach gentle: A bare simmer helps the chicken stay moist and easy to shred.

Ingredient notes

  • Use glutinous rice: This dish depends on glutinous rice, which cooks into a chewy, cohesive texture unlike standard long-grain rice.
  • Chicken fat adds richness: Folding chicken fat through the hot rice gives it a rounded savoury flavour and glossy finish.
  • Add fried onion last: Keep the fried onion separate until serving so it stays crisp against the warm rice and chicken.

Make-ahead tips

  • Store the components apart: Refrigerate the rice and chicken in separate airtight containers, and keep the fried onion aside until serving.
  • Reheat gently: Steam the rice until piping hot and warm the chicken with a little water or poaching liquid to prevent it drying out.
  • Freeze without the topping: Freeze the rice and chicken without fried onion, then defrost in the fridge before reheating.

  1. Rinse the glutinous rice in several changes of cold water until the water runs mostly clear. Cover with plenty of cold water and soak for 6 hours, or overnight. Drain well in a colander.
  2. Meanwhile, make the poaching broth: slice the ginger and lightly bruise the spring onions. Put the chicken thighs in a large pot with the ginger, spring onions, water and fine sea salt. Bring just to a gentle simmer, then poach over low heat for 20 to 25 minutes until the chicken is cooked through and the juices run clear.
  3. Lift the chicken out and leave until cool enough to handle. Pull the meat into fine shreds, discarding skin and bones. Toss the chicken with the fish sauce and white pepper, then cover and keep warm.
  4. Set up a steamer over a saucepan or pot with a few centimetres of simmering water. Spread the drained rice in the steamer basket, cover, and steam for 25 to 30 minutes, turning the rice once or twice, until tender and glossy. If it looks dry at any point, sprinkle over a tablespoon or two of water and continue steaming.
  5. Tip the hot rice into a mixing bowl and immediately fold in the chicken fat until evenly coated and rich. Taste and, if you like, add a tiny splash more fish sauce from the measured amount already used on the chicken by mixing a little of the seasoned chicken through the rice. Spoon the rice into bowls, top with the shredded chicken, and finish with fried onion.

Recipe notes

Tips

  • Keep the poaching at a bare simmer so the chicken stays juicy and the broth remains clear.
  • For the best texture, drain the soaked rice very well before steaming so it cooks up tender rather than wet.
  • If serving to pregnant people, young children, older adults, or anyone immunocompromised, ensure the chicken is fully cooked through before shredding.

Substitutions

  • Replace Chicken fat with Olive oil for a lighter finish.
  • Replace Chicken thighs with Chicken breast for a leaner topping, but reduce the poaching time slightly to avoid dryness.
  • Replace Fried onion with thinly sliced Shallot, gently fried in Chicken fat until golden, then drained well.

Storage

  • Refrigerate up to 3 days
  • Cool the rice and chicken quickly, then refrigerate in separate airtight containers. Reheat the rice by steaming for 8 to 10 minutes until piping hot, and warm the chicken gently with a splash of water or a spoonful of the poaching liquid; add the fried onion at the table. Freeze rice and chicken (without fried onion) for up to 2 months and defrost overnight in the fridge before reheating.
