Risotto alla Salsiccia (Italian Sausage Risotto)
Why this recipe works
- Naturally creamy texture: Arborio rice releases starch as stock is added gradually, creating a creamy risotto without needing cream.
- Savoury depth: Browning the sausage before adding the rice builds a rich base, while white wine adds balance and lift.
- Classic risotto method: Toasting the rice and adding hot stock a ladle at a time helps keep the grains distinct, tender and al dente.

Ingredient notes
- Choose the right rice: Arborio is ideal here because it releases enough starch for creaminess while holding its shape during simmering.
- Season with restraint: Sausage, stock and Parmesan can all be salty, so taste near the end before adding more seasoning.
- Use a dry white wine: A dry wine keeps the risotto savoury and balanced; avoid anything noticeably sweet.
Texture tips
- Finish off the heat: Stirring in the butter and Parmesan after removing the pan from the heat helps create a glossy, cohesive finish.
- Stop while the rice is al dente: The risotto should be creamy and loose, with the rice still offering a slight bite rather than turning soft or mushy.
Timing notes
- Serve straight away: Risotto thickens as it sits, so it is best served as soon as it has rested briefly and still slowly spreads on the plate.
- Brief resting improves the finish: A short rest after adding the butter and Parmesan allows the texture to settle without losing its creamy consistency.
Make-ahead tips
- Reheat gently: Warm leftovers in a saucepan with a little hot stock, stirring until piping hot and creamy again.
- Best eaten fresh: The texture is at its best immediately after cooking; chilling makes the rice firmer and less fluid.

Instructions
- Pour the chicken stock into a saucepan and bring it to a gentle simmer, then keep it hot over a low heat. This keeps the risotto cooking steadily once you start adding liquid.
- Finely chop the yellow onion. Heat the olive oil with half the butter in a large frying pan over a medium heat, then cook the onion for 6 to 8 minutes until soft and translucent, not browned.
- Squeeze the Italian pork sausage meat out of its skins into the pan and break it up with a wooden spoon. Cook for 6 to 8 minutes until browned and cooked through, then season with a pinch of the fine sea salt and a little black pepper.
- Stir in the arborio rice and toast for 2 minutes until the grains look slightly translucent at the edges. Pour in the dry white wine and stir until it has almost completely evaporated.
- Add a ladle of hot stock and stir gently until it is mostly absorbed. Continue adding stock a ladle at a time, stirring often, for 18 to 22 minutes until the rice is al dente and the risotto is creamy and loose enough to slowly spread on a plate.
- Take the pan off the heat and stir in the remaining butter and the parmesan until glossy and rich. Taste and adjust with the remaining fine sea salt and black pepper, then rest for 2 minutes before serving.
Recipe notes
Tips
- Keep the stock at a gentle simmer; adding cold stock slows cooking and can make the risotto gluey.
- Stir often but not constantly: enough to release starch for creaminess, while letting the rice absorb each ladle of stock.
- If you run short of stock before the rice is tender, top up with hot water and continue cooking until al dente.
Substitutions
- Replace Dry White Wine with the same amount of Chicken stock for an alcohol-free version.
- Replace Parmesan with Grana padano cheese for a slightly milder finish.
- Replace Butter with extra Olive oil for a lighter, less rich risotto.
Storage
- Refrigerate up to 2 days
- Cool quickly, cover and refrigerate. Reheat gently in a saucepan with a splash of Chicken stock, stirring until piping hot and loosened to a creamy consistency.
