Jeyuk Bokkeum (Spicy Pork Stir-Fry)
Why this recipe works
- Bold chilli-savoury flavour: Gochujang, gochugaru, soy sauce, garlic and ginger create a deep, punchy marinade that clings well to thinly sliced pork.
- Fast high-heat cooking: Thin slices of pork cook quickly in a hot wok or frying pan, keeping the stir-fry practical for a weeknight dinner.
- Glossy sauce and tender pork: Brief marinating seasons the meat while high heat reduces the sauce enough to coat the pork without making it watery.

Adjust the heat
- For a milder stir-fry: Reduce the gochugaru and keep the gochujang for depth, sweetness and colour without as much direct chilli heat.
- For more heat: Increase the gochugaru slightly or finish with a few fresh chilli slices just before serving.
- Balance the chilli: Serve with plain rice, lettuce leaves or mild banchan to soften the heat without changing the stir-fry itself.
Ingredient notes
- Choose pork with a little fat: Pork shoulder suits this dish because it stays juicy during high-heat stir-frying and carries the spicy marinade well.
- Use Korean chilli flakes: Gochugaru gives a distinctive warm, slightly smoky chilli flavour; ordinary chilli flakes can taste sharper and more aggressive.
- Slice the pork thinly: Thin, even slices cook quickly and help the marinade cling, giving better texture and more consistent seasoning.
Common mistakes
- Overcrowding the wok: If the pan is too full, the pork releases liquid and stews instead of searing; cook in batches if needed.
- Using too little heat: A properly hot wok or frying pan helps the onions colour lightly and the marinade reduce to a glossy coating.
- Cooking the pork too long: Once the pork is cooked through and the sauce has thickened slightly, stop cooking to keep the meat tender.
Serving ideas
- Serve with rice: Steamed short-grain rice is the most practical pairing, soaking up the spicy, savoury sauce.
- Add banchan: Kimchi, pickled radish or seasoned vegetables add freshness and acidity alongside the rich pork.
- Make lettuce wraps: Spoon the pork into lettuce leaves with rice for a lighter, hands-on serving style.

Ingredients
Instructions
- Slice the pork thinly into bite-sized strips. In a bowl, mix the gochujang, gochugaru, light soy sauce and caster sugar. Finely grate the garlic and ginger into the bowl, add the pork, and toss until well coated.
- Leave the pork to marinate while you prep the vegetables. Slice the yellow onion into thin wedges and cut the spring onions into 4 to 5 cm lengths. Keep the white and green parts of the spring onion separate if you can.
- Heat a wok (or large frying pan) over high heat until very hot, then add the vegetable oil. Add the onion and stir-fry for 1 to 2 minutes until it starts to soften and take on a little colour. Add the marinated pork and stir-fry for 5 to 7 minutes, keeping it moving, until the pork is cooked through and the sauce looks glossy and slightly reduced.
- Add the spring onions and stir-fry for 30 to 60 seconds until just wilted but still bright. Take off the heat and drizzle over the toasted sesame oil. Sprinkle with the roasted sesame seeds and serve straight away.
Recipe notes
Tips
- For the best texture, slice the pork as thinly as you can; chilling it for 10 minutes first makes it easier to cut cleanly.
- Keep the pan hot and avoid overcrowding; if your pan is small, stir-fry the pork in two batches so it sears rather than stews.
- Food safety: make sure the pork is cooked all the way through with no pink remaining, and keep raw pork separate from ready-to-eat foods.
Substitutions
- Replace Pork shoulder with Pork tenderloin for a leaner stir-fry; reduce the cooking time slightly to keep it juicy.
- Replace Caster sugar with Honey for a rounder sweetness; whisk it into the marinade until fully dissolved.
- Replace Vegetable oil with Rapeseed oil for a similar high-heat stir-fry oil.
Storage
- Refrigerate up to 3 days
- Cool quickly, then refrigerate in a sealed container for up to 3 days. Reheat in a hot wok or frying pan with a small splash of water until piping hot. Freeze for up to 2 months; defrost overnight in the fridge before reheating.
