Tex-Mex Enchiladas with Red Chilli Sauce
Why this recipe works
- Layered sauce: Softened onion, garlic, cumin and tomato purée give the red chilli sauce a deeper, more rounded flavour before baking.
- Saucy and satisfying: The tortillas soften in the sauce while the cheese melts through the chicken filling and over the top.
- Easy to serve: Baking the enchiladas in one dish makes them practical for family dinners, casual entertaining or reheating in portions.

Adjust the heat
- For a milder version: Choose a mild red enchilada sauce and use a creamy cheese such as Monterey Jack to soften the chilli flavour.
- For more heat: Use a hotter enchilada sauce or add a little extra chilli seasoning to the sauce as it simmers.
- Keep the heat balanced: Taste the sauce before assembling; a little extra seasoning or acidity can help if it tastes flat rather than rounded.
Texture tips
- Use a thin base layer of sauce: A light coating in the baking dish helps prevent sticking without making the tortillas overly soft underneath.
- Let them rest before serving: Resting for a few minutes after baking allows the filling and sauce to settle, so the enchiladas lift out more neatly.
- Warm tortillas just until pliable: Brief warming makes corn tortillas easier to roll; overheating can dry them out and make them more likely to split.
Make-ahead tips
- Prepare the filling and sauce ahead: The chicken filling and sauce can be made in advance, then assembled with warm tortillas when ready to bake.
- Reheat gently: Reheat covered in a 180°C (355°F) oven until piping hot, adding a splash of water if the sauce has thickened too much.
- Freeze in portions: Cooked enchiladas freeze well when wrapped securely; defrost overnight in the fridge before reheating.
Ingredient swaps
- Use chicken breast instead: Chicken breast gives a leaner filling, but cook it carefully and shred as soon as it is done to avoid dryness.
- Change the cheese: Monterey Jack can replace mature cheddar for a milder, creamier melt.
- Use taco seasoning: Taco seasoning can stand in for cumin if you want a broader, more seasoned Tex-Mex flavour.

Ingredients
Instructions
- Heat the oven to 200°C (390°F). Peel and finely chop the onion, then peel and crush the garlic.
- Heat 1 tbsp of the vegetable oil in a saucepan over medium heat. Cook the onion with a pinch of the fine sea salt for 6 to 8 minutes until softened, then stir in the garlic and ground cumin for 30 seconds until fragrant.
- Stir in the tomato purée, then pour in the red enchilada sauce. Simmer for 8 to 10 minutes until slightly thickened and glossy; season with the remaining fine sea salt and the black pepper.
- Meanwhile, heat the remaining 1 tbsp vegetable oil in a large frying pan over medium-high heat. Season the chicken thighs lightly, then cook for 10 to 12 minutes, turning, until cooked through and no longer pink in the centre.
- Tip the chicken into a mixing bowl and shred it using two forks. Stir in about 3 tbsp of the sauce to moisten, then stir in half of the cheddar cheese.
- Spread a thin layer of sauce over the base of a baking dish. Warm the corn tortillas briefly in the dry frying pan, 10 to 15 seconds per side, just until pliable.
- Divide the chicken mixture between the tortillas, roll up tightly, and arrange seam-side down in the dish. Pour over the remaining sauce and scatter over the remaining cheddar cheese.
- Bake for 15 to 18 minutes until hot and bubbling, and the cheese has melted. Rest for 5 minutes before serving so the enchiladas hold together neatly.
Recipe notes
Tips
- If your tortillas crack as you roll, warm them a little longer so they soften before filling.
- For a deeper flavour, let the sauce simmer until it lightly coats the back of a spoon before assembling.
- Chicken should be cooked until piping hot all the way through; if serving anyone vulnerable, avoid undercooking and reheat leftovers thoroughly.
Substitutions
- Replace Cheddar cheese with Monterey Jack cheese for a milder, creamier topping.
- Replace Chicken thighs with Chicken breast for a leaner filling; reduce the cooking time slightly to avoid drying out.
- Replace Ground cumin with taco seasoning for a more complex spice profile.
Storage
- Refrigerate up to 3 days
- Cool completely, then cover and refrigerate. Reheat in a 180°C (355°F) oven for 15 to 20 minutes until piping hot; add a splash of water if the sauce looks dry. Freeze portions well wrapped for up to 2 months and defrost overnight in the fridge before reheating.
