Huevos Rancheros (Fried Eggs with Tomato Chilli Sauce)
Why this recipe works
- Simple sauce, layered flavour: Onion, garlic, serrano chilli and cumin give the tomato sauce savoury depth without a long cooking time.
- Good contrast: Lightly toasted tortillas, tender eggs, spoonable sauce and crumbly queso fresco keep each bite balanced.
- Fast breakfast or brunch: The sauce, tortillas and eggs are cooked in sequence, keeping the full dish comfortably under 30 minutes.

Adjust the heat
- For less heat: Remove the serrano seeds before chopping, or use jalapeño for a gentler chilli flavour.
- For more heat: Keep the serrano seeds in the sauce, or use a hotter fresh chilli if you prefer a sharper kick.
- Keep it balanced: Queso fresco and fresh coriander help soften the heat, so add them just before serving rather than cooking them into the sauce.
Ingredient notes
- Use corn tortillas: Corn tortillas give huevos rancheros their characteristic flavour and hold up well under the warm sauce.
- Ripe tomatoes matter: Ripe plum tomatoes break down more easily and give the ranchero sauce better sweetness and body.
- Queso fresco substitute: Feta works well as a salty alternative, but use it lightly as it is usually sharper and more assertive.
Make-ahead tips
- Make the sauce ahead: The ranchero sauce can be cooked in advance and kept chilled for up to 2 days.
- Reheat gently: Warm the sauce in a saucepan until piping hot, adding a little water if it has thickened.
- Finish fresh: Fry the eggs and warm the tortillas just before serving so the yolks stay soft and the tortillas stay pliable.
Common mistakes
- Watery sauce: Simmer until the tomatoes have broken down into a spoonable sauce before assembling, otherwise the tortillas can soften too quickly.
- Overcooked eggs: For soft yolks, remove the eggs once the whites are set. For vulnerable diners, cook the eggs until the yolks are firm and the whites are fully set.

Ingredients
Instructions
- Finely chop the onion. Finely chop the serrano pepper (remove the seeds for less heat), and finely chop the garlic. Roughly chop the tomatoes.
- Heat 1 tbsp of the vegetable oil in a saucepan over medium heat. Add the onion with a pinch of the fine sea salt and cook for 4 to 5 minutes until softened. Stir in the serrano pepper, garlic, and ground cumin and cook for 30 to 60 seconds until fragrant.
- Add the tomatoes and 120 ml water, then bring to a gentle simmer. Cook for 6 to 8 minutes, stirring occasionally, until the tomatoes break down into a spoonable sauce. Season with the remaining fine sea salt, then keep warm on a low heat.
- Warm the corn tortillas in a dry large frying pan over medium heat for about 30 seconds per side, until pliable and lightly toasted. Stack them on plates as you go to keep them warm. Wipe out the pan if needed.
- Heat the remaining 1 tbsp vegetable oil in the same frying pan over medium heat. Crack in the eggs and fry for 2 to 3 minutes until the whites are set but the yolks are still soft; cover the pan for the last minute if you want the tops set. Season the eggs lightly with a pinch of fine sea salt.
- Set two tortillas on each plate and top with two eggs. Spoon the warm ranchero sauce over the eggs. Finish with chopped fresh coriander and crumbled queso fresco, then serve straight away.
Recipe notes
Tips
- For a smoother ranchero sauce, simmer it for an extra 2 to 3 minutes, then mash the tomatoes against the side of the pan with a wooden spoon.
- If you are serving anyone who is pregnant, elderly, or immunocompromised, cook the eggs until the yolks are firm and the whites are fully set.
Substitutions
- Replace the serrano pepper with jalapeno pepper for a milder heat.
- Replace queso fresco with feta cheese for a similar salty finish.
Storage
- Refrigerate up to 2 days
- Store the ranchero sauce in an airtight container in the fridge for up to 2 days. Reheat gently in a saucepan until piping hot, adding a splash of water if it has thickened; fry fresh eggs and warm fresh tortillas to serve.
