Chilaquiles Verdes (Tortillas in Tomatillo Salsa Verde)

In Mexican cooking, chilaquiles verdes are a lively way to turn corn tortillas and salsa into a substantial breakfast or brunch dish. Crisp tortilla triangles are briefly tossed through hot salsa verde so they absorb the tangy tomatillo, jalapeño, garlic and coriander sauce while keeping some crunch at the edges. Fried eggs make the bowl more filling, while Mexican crema, queso fresco and red onion add cool richness, saltiness and bite. The key is timing: bring the salsa and toppings together just before serving for the best mix of softened tortillas, sharp green sauce and fresh finishing touches.

Why this recipe works

  • Bright salsa verde: Simmered tomatillos, jalapeño, garlic, coriander and lime create a sharp, savoury sauce that cuts through the fried tortillas and creamy toppings.
  • Crisp-edged tortillas: Frying the tortilla triangles before adding them to the salsa gives tender centres with enough crispness left at the edges.
  • Efficient cooking: The salsa cooks quickly, and the tortillas and eggs can be prepared while the other components are ready to assemble.
  • Flexible toppings: Eggs, crema, queso fresco and onion make the dish substantial, while the toppings can be adjusted to suit the meal.

Adjust the heat

  • For a milder salsa: Remove the jalapeño seeds and use less chilli before blending the salsa verde.
  • For more heat: Keep some of the jalapeño seeds in the salsa, or add extra jalapeño if you prefer a sharper chilli kick.
  • Balance the spice: Crema, queso fresco and a little extra lime help round out the heat without dulling the salsa.

Texture tips

  • Add tortillas at the end: Heat the salsa first, then toss in the fried tortilla triangles just before serving so they soften only slightly.
  • Fry in batches: Avoid crowding the pan when frying the tortillas; batches help them colour evenly and stay crisp.
  • Use sturdy corn tortillas: Slightly stale corn tortillas, if available, fry up firmer and hold their shape well in the salsa.

Make-ahead tips

  • Make the salsa ahead: The salsa verde can be cooked and blended in advance, then reheated to a simmer before adding the tortillas.
  • Keep components separate: Store the salsa, fried tortillas and toppings separately where possible to preserve the tortilla texture.
  • Reheat carefully: Warm the salsa until bubbling, then toss with the tortillas briefly rather than reheating a fully assembled bowl.

Ingredient notes

  • Use corn tortillas: Corn tortillas give chilaquiles their characteristic flavour and structure; flour tortillas become softer and less defined.
  • Drain the tomatillos: Drain the cooked tomatillos well before blending so the salsa thickens quickly in the pan.
  • Adjust lime to taste: Lime should brighten the salsa verde; add it gradually and balance with salt so the sauce tastes lively rather than sour.

  1. Husk and rinse the tomatillos, then halve them. Halve the jalapeno and remove the seeds if you want it milder. Peel the garlic, slice the red onion thinly, and cut the tortillas into triangles.
  2. Put the tomatillos, jalapeno and garlic in a saucepan and cover with water. Bring to the boil, then simmer for 8 to 10 minutes until the tomatillos are soft and turning olive-green. Drain well.
  3. Blend the cooked tomatillos, jalapeno and garlic with the fresh coriander, lime juice and fine sea salt until smooth. Taste and adjust with a little more salt or lime if needed. Set the salsa aside while you fry the tortillas.
  4. Heat the vegetable oil in a large frying pan over medium-high heat. Fry the tortilla triangles in batches for 2 to 3 minutes, turning, until crisp and lightly golden. Transfer to a plate and pour off all but about 1 tbsp of oil from the pan.
  5. Return the pan to medium heat and pour in the salsa. Simmer for 2 to 3 minutes until hot and slightly thickened, then add the fried tortillas and toss gently. Cook for 1 to 2 minutes until the tortillas are coated and just starting to soften, with some crisp edges remaining.
  6. In a clean frying pan, fry the eggs in a little of the remaining vegetable oil over medium heat until the whites are set and the yolks are still runny, 2 to 3 minutes. Divide the chilaquiles between two bowls. Top with the eggs, drizzle over the mexican crema, scatter with queso fresco and finish with the sliced red onion.

Recipe notes

Tips

  • For the best texture, add the tortillas to the hot salsa right before serving and toss just until coated so they stay pleasantly crisp at the edges.
  • If you are cooking for someone vulnerable to foodborne illness, cook the eggs until the yolks are set, or use pasteurised eggs if available.

Substitutions

  • Replace jalapeno pepper with a smaller amount of jalapeno pepper (use half) for a milder heat.
  • Replace mexican crema with a smaller amount of mexican crema (use 45 ml) for a lighter finish.

Storage

  • Refrigerate up to 2 days
  • Chilaquiles are best eaten straight away. If you have leftovers, refrigerate the salsa and tortillas separately where possible; reheat the salsa in a saucepan until bubbling, then toss with the tortillas briefly so they do not turn too soft.
