Harissa Chickpea Bowl with Couscous and Tahini Dressing

A grain bowl like this works because each element brings a clear role: fluffy couscous as the quick, light base; harissa-coated chickpeas for warmth, spice and a little roasted crispness; cucumber and cherry tomatoes for freshness; and a lemon tahini dressing to pull everything together. The flavours are Middle Eastern-inspired rather than heavy, with cumin, garlic, parsley and citrus giving the bowl depth without making it complicated. It is well suited to a practical vegan lunch, especially when the components are stored separately so the salad stays crisp and the chickpeas can be reheated before serving.

Why this recipe works

  • Layered savoury heat: Harissa and cumin season the chickpeas as they roast, giving the bowl warmth and depth without needing a long cook time.
  • Good texture contrast: Crisped chickpeas, fluffy couscous and fresh salad vegetables keep each bite varied rather than heavy.
  • Bright, creamy dressing: Lemon loosens and sharpens the tahini, balancing the richness of the sesame and the spice of the harissa.

Adjust the heat

  • For a gentler bowl: Use a mild harissa and add it gradually, then balance with extra lemon or tahini dressing if the heat builds too much.
  • For more heat: Choose a hotter harissa or add a little more to the chickpeas before roasting.

Texture tips

  • Dry the chickpeas well: Removing surface moisture helps the chickpeas brown at the edges rather than steam on the tray.
  • Dress just before serving: Keep the tahini dressing separate until assembly so the couscous stays light and the vegetables stay crisp.

Make-ahead tips

  • Best stored in parts: Keep the couscous, roasted chickpeas, chopped vegetables and dressing in separate containers for the best texture.
  • Refresh the chickpeas: Reheat the chickpeas on a tray at 200°C (390°F) until piping hot before assembling with the cold salad ingredients.

Ingredient notes

  • Harissa varies: Different harissa pastes can range from smoky and mild to sharply hot, so taste yours before adding more.
  • Loosen tahini gradually: Tahini can thicken when lemon is added; whisk in water a little at a time until it becomes smooth and pourable.

  1. Heat the oven to 220°C (430°F). Drain and rinse the chickpeas, then pat them very dry with a clean tea towel.
  2. Tip the chickpeas onto a baking tray and toss with the olive oil, harissa, ground cumin and fine sea salt. Roast for 18 to 22 minutes, shaking the tray halfway, until browned and a little crisp at the edges.
  3. Meanwhile, put the couscous in a saucepan and add 180 ml just-boiled water from the kettle. Cover with a lid, take off the heat, and leave for 5 minutes, then fluff with a fork.
  4. Make the dressing: in a mixing bowl, whisk the tahini with the juice of the lemon and the garlic (finely grated or crushed). Whisk in the water a little at a time until smooth and pourable.
  5. Dice the cucumber, halve the cherry tomatoes, and roughly chop the fresh parsley. Divide the couscous between two bowls, top with the salad vegetables and harissa chickpeas, then spoon over the lemon tahini dressing and finish with parsley.

Recipe notes

Tips

  • Drying the chickpeas well before roasting helps them brown faster and keeps the harissa coating from steaming.
  • If the tahini dressing tightens as it sits, whisk in a splash more water until it loosens again.
  • If you are serving anyone who is pregnant, elderly, or immunocompromised, use a pasteurised tahini and ensure the chickpeas are roasted until piping hot.

Substitutions

  • Replace couscous with bulgur for a slightly nuttier, chewier base.
  • Replace fresh parsley with fresh mint for a brighter, cooler finish.
  • Replace cucumber with radish for extra crunch and a peppery bite.

Storage

  • Refrigerate up to 3 days
  • Store the couscous, salad, chickpeas and dressing in separate airtight containers for the best texture. Reheat the chickpeas on a baking tray at 200°C (390°F) for 6 to 8 minutes until piping hot, then assemble; the salad is best added cold.
