Modern Lamb Köfte Bowl with Bulgur and Yoghurt Sauce
Why this recipe works
- Layered savoury flavour: Onion, garlic, cumin, paprika and lamb create deeply seasoned köfte without needing a long marinade.
- Fresh, tangy balance: Lemon yoghurt, tomato, cucumber and sumac cut through the richness of the lamb and keep the bowl bright.
- Contrasting textures: Juicy grilled köfte, fluffy bulgur, crisp salad and smooth sauce make each bowl feel complete.

Timing notes
- Let the bulgur stand: Keeping the bulgur covered off the heat allows it to finish steaming and become light rather than wet.
- Shape before you start grilling: Forming the köfte before the bulgur finishes cooking keeps the workflow smooth and avoids rushing at the grill.
Texture tips
- Mix until just tacky: Work the lamb mixture enough for it to bind, but avoid excessive mixing, which can make the köfte dense.
- Turn gently, don’t press: Pressing the köfte on the grill forces out juices; turn them with tongs instead.
- Keep the sauce separate until serving: Spoon the yoghurt sauce over the bowls at the end so the bulgur and salad keep their texture.
Ingredient swaps
- For a gluten-free base: Use quinoa instead of bulgur for a similar bowl-friendly texture without wheat.
- For a dairy-free sauce: Use a plain unsweetened dairy-free yoghurt and sharpen it with lemon to keep the same cooling effect.
- If you don’t have sumac: Use a little sweet paprika for colour and warmth, though the finish will be less tangy.
Make-ahead tips
- Store components separately: Keep cooked köfte, bulgur, salad and yoghurt sauce in separate containers so the fresh elements stay crisp.
- Reheat only the warm elements: Warm the köfte and bulgur until piping hot, then add the salad and yoghurt sauce just before serving.
- Freeze the köfte only: Cooked köfte freeze well; defrost overnight in the fridge before reheating.

Ingredients
Instructions
- Finely grate the onion into a mixing bowl, then grate in the garlic. Finely chop most of the parsley, reserving a little for serving.
- Add the minced lamb, ground cumin, sweet paprika and 1 tsp of the fine sea salt to the bowl. Mix well with your hands until the mixture feels slightly tacky, then shape into 8 small kofte.
- Put the bulgur in a saucepan with 240 ml water and 0.25 tsp of the fine sea salt. Bring to the boil, cover, then cook on the lowest heat for 10 minutes; take off the heat and leave covered for 10 minutes.
- While the bulgur cooks, make the sauce: in a bowl, stir together the Greek yogurt with the juice of half the lemon and a pinch of the sumac. Taste and add a little more lemon juice if you want it sharper.
- Cut the cucumber and tomatoes into small chunks and put into a bowl. Dress with 1 tbsp of the extra virgin olive oil, the juice of the remaining lemon half, and a pinch of the fine sea salt.
- Heat the grill to medium-high and brush the kofte lightly with the remaining 1 tbsp extra virgin olive oil. Grill for 8 to 10 minutes, turning every couple of minutes, until browned and cooked through.
- Fluff the bulgur with a fork and divide between two bowls. Top with the salad and kofte, spoon over the yoghurt sauce, then finish with the remaining sumac and reserved parsley.
Recipe notes
Tips
- If you have time, chill the shaped kofte for 10 minutes before grilling to help them hold their shape.
- For the juiciest kofte, avoid pressing them down on the grill; just turn gently with tongs.
- If serving anyone vulnerable to foodborne illness, cook the kofte until well done and piping hot throughout.
Substitutions
- Replace Greek yogurt with whole-milk yogurt for a looser, lighter sauce.
- Replace bulgur with quinoa for a gluten-free grain base with a similar bowl-friendly texture.
- Replace sumac with sweet paprika for a milder, smoky-sweet finish (the dish will be less tangy).
Storage
- Refrigerate up to 3 days
- Store the cooked kofte and bulgur in separate airtight containers in the fridge; keep the salad and yoghurt sauce separate for best texture. Reheat kofte and bulgur in a 180°C (355°F) oven until piping hot, or warm gently in a frying pan; add the salad and sauce after reheating. Freeze cooked kofte only, then defrost overnight in the fridge before reheating.
