Acqua Pazza (Fish Poached in Tomato Broth)
Why this recipe works
- Gentle poaching: Cooking the fish in a barely simmering broth keeps the fillets tender and helps them absorb the tomato, garlic and wine flavours.
- Bright, balanced broth: Cherry tomatoes, dry white wine and lemon bring acidity that cuts through the olive oil and keeps the dish light.
- Fast weeknight cooking: The sauce and fish cook in the same pan, with the fillets needing only a short covered poach once the broth is simmering.

Ingredient notes
- Choose even fish fillets: Use skinless white fish fillets of similar thickness so they finish cooking at the same time.
- Use ripe tomatoes: Ripe cherry tomatoes soften quickly and give the broth its natural sweetness and colour.
- Adjust the lemon at the end: Add lemon juice after cooking so the broth tastes fresh rather than sharp or reduced.
Common mistakes
- Do not boil the fish: Keep the broth at a gentle simmer; vigorous boiling can make the fish tighten and turn dry.
- Give the fillets space: Arrange the fish in a single layer so each piece poaches evenly in the tomato broth.
- Stop when just opaque: The fish is ready when it flakes easily; leaving it covered for too long can make it fragile and dry.
Ingredient swaps
- Skip the wine if needed: Use water with extra lemon for an alcohol-free version that keeps the broth light and bright.
- Change the herbs: Fresh basil can replace parsley for a softer, sweeter finish.
Serving ideas
- Serve with bread: Crusty bread is ideal for spooning up the tomato broth.
- Add a simple side: Serve with boiled potatoes, rice or a green salad to make the dish more substantial.
- Finish fresh: A final scatter of parsley and extra lemon wedges keeps the dish bright at the table.

Ingredients
Instructions
- Thinly slice the garlic. Halve the cherry tomatoes, and finely chop the parsley; zest the lemon, then cut it into wedges.
- Warm the olive oil in a large frying pan over medium heat. Add the garlic and cook for 30 to 60 seconds until fragrant, then add the tomatoes, salt and pepper and cook for 3 to 4 minutes until the tomatoes start to soften.
- Pour in the white wine and bring to a lively simmer for 2 minutes to cook off the alcohol. Nestle the fish into the tomatoes in a single layer.
- Cover and gently poach for 5 to 7 minutes, adjusting the heat so the broth barely simmers. The fish is ready when it turns opaque and flakes easily.
- Remove from the heat and squeeze over a little lemon juice, then sprinkle with lemon zest and the parsley. Serve straight away with plenty of the tomato broth and extra lemon wedges on the side.
Recipe notes
Tips
- Choose fillets of an even thickness so they cook at the same rate; if one piece is thicker, tuck it into the hottest centre of the pan.
- Keep the broth at a gentle simmer rather than a boil to prevent the fish from tightening and turning dry.
- If serving anyone who is pregnant, elderly, or immunocompromised, make sure the fish is cooked until fully opaque and flakes easily all the way through.
Substitutions
- Replace Dry White Wine with the same amount of water plus an extra squeeze of Lemon for a non-alcoholic version.
- Replace Fresh parsley with the same amount of Fresh basil for a softer, sweeter herbal finish.
Storage
- Refrigerate up to 2 days
- Cool, then refrigerate in a sealed container with the broth. Reheat gently in a covered pan over low heat until piping hot, taking care not to boil or the fish may break up.
